Air Fryer Veggies
I am obsessed with my Air Fryer. I know I am kinda late to the game but I am 100% on board now and love trying new recipes … but one of my go to ones I make every week are these Air Fryer Veggies.
Let’s talk veggies…
One of my favorite parts of going to the grocery store is walking through the produce area and finding what veggies I am going to cook for the week. Almost every Sunday I roast, or now air fry, a large batch of veggies and use them in salads all week long or as quick fix sides for dinner.
This last week as I was walking through the produce section of trader joes I came across tri-color cauliflower, broccolini, baby eggplants, brussels sprouts and peppers. You can really use any combo of veggies you want, just divide them into similar cooking groups (hardier veggies all together and more delicate veggies together) so that everything is cooked to perfection.
For this combo I cooked the cauliflower, eggplant & sprouts together. Then cooked broccolini and peppers together.
It all starts with the prep…
Just as when you roast veggies in the oven you have to prep the veggies for the air fryer, only with A LOT less oil. I actually use spray oil most of the time. I love the spray olive oil and then season generously.
For the seasoning I use this all purpose seasoning, but you can use any seasoning blend you prefer. Chili lime would be a fun take for summer, or just simple salt & pepper, ranch seasoning (click here for my homemade version), or maybe even lemon pepper. The possibilities are endless.
Veggies for everyone
The beauty of the air fryer is you can cook whatever veggies you want. This means you can use whatever combo your family loves. If y’all are more potato peeps throw in some potatoes. Want onions, onions you can have. Asparagus, no problem. Honestly whatever looks good … go for it.

Air Fryer Veggies
Ingredients
- Eggplant
- Brussels Sprouts
- Broccolini
- Cauliflower
- Bell Peppers
- 1 Tbsp Olive Oil
- 1 Tbsp All-Purpose Seasoning
Instructions
- Preheat Air Fryer to 425
- Wash and cut veggies into bite-size pieces, pat dry – using enough to fit into your AF easily, or work in batches
- In a large bowl combine veggies, oli & seasoning, todding to coat veggies evenly
- Place into AF in a single layer, work in batches if needed to accomadate veggies
- Roast for 20-25 minutes, tossing every 8-10 minutes, until veggies are tender
- Remove & serve
- ENJOY!
