KETO Cheesecake Brownies

It has been a hot minute since I have been on the KETO train for reals.  I am back 100% and ready to change my life.  I know me and for me to be successful I have to have options for whatever craving may come about.  Trust me these super fudgy KETO Cheesecake Brownies are the perfect sweet treat option.  LIKE PERFECT IN EVERY WAY!

It is all about the swirl…

To make the swirl perfect you start with a brownie layer.  Next comes a layer of cheesecake and then you finish it with the rest of the brownie.  Then comes the swirl, you gotta love a good swirl.  I used a knife to swirl together the brownie and cheesecake batters to make this beautiful design.

You could use a toothpick, skewer or even a fork… whatever you have on hand.

Decadence at it’s BEST!

The brownie layer is super fudgy and the cheesecake layer is super creamy making each bite AMAZING!  Even better no one even knew these Cheesecake Brownies were KETO.  Not only are they keto friendly but they are KETO amazing.  Each brownie is only 2 net Carbs…yep only 2!!

If you wanted to add in sugar free chocolate chips you could.  Just make sure to add in the extra carbs (if your counting).  If you are just looking for a low carb, sugar free treat for your family…this needs to be your GO TO!

Another thing I love about these sweet cheesecake treats is that they look super fancy and super hard… but in reality they are super easy.  The hardest part of this recipe is the fact that there are 2 bowls to clean up instead of just one.  

You could easily serve these at a brunch, family get together, BBQ, or shower this summer and everyone will be SUPER IMPRESSED!

Cheesecake Brownies

Rich and fudgy brownies with a decadent cream cheese layer that makes these brownies something to remember...and no one would ever believe they are KETO friendly.

8 ounces cream cheese, softened
1/4 cup sugar
1 egg
1 teaspoon vanilla extract
1/2 teaspoon salt
9 tablespoons salted butter
2/3 cup sugar
10 tablespoons unsweetened cocoa powder
1 teaspoon vailla extract
1 teaspoon salt
2 eggs
3/4 cup flour (AP or Gluten Free Flour )


Preheat oven to 350
Line a 9x9 pan with parchment paper, set aside
In the bowl of a stand mixer cream together cream cheese & sugar until smooth
Add in egg, vanilla and salt and mix until smooth
Set aside
In a large heat safe measuring cup or bowl heat butter, sugar, cocoa powder and salt in 1 minute intervals in the microwave until butter is just melted and sugar is dissolved
Stir in one egg at a time, mixing until just combined
Stir in flour and mix until just combined
Pour 2/3 of the batter into the prepared pan
Pour cream cheese mixture over brownie batter
Spoon remaining brownie batter over cheesecake batter
Using a knife swirl the 2 batter together to make a nice pattern
Bake for 18-23 minutes or until center is just set
Remove and let cool in pan for 10 minutes
Remove from pan and let cool completely
Store in the refrigerator for several days or freeze for 2 months

    These are awesome!! I used pumpkin instead of the butter and only 1/2 the sweetener in the brownies. Next time I will use 3/4 of the amount. Great recipe!!
