Easter is coming…. it will be here before we know, and if you are still looking for a sweet treat I have the perfect recipe for you. Robin’s Egg Cookies! Trust me everyone will love these!
Quick and Easy
The beauty of these cookies is that they are not only delicious but they are also super easy to mix up. I was ready to go put the first pan in the oven by the time the oven was done preheating. There is no chilling or freezing needed for these sweet treats.
I love cookies that come together super quick, that means I can have them anytime I want them.
Don’t over bake them
The cook time is pretty short for these cookies. Mine were perfect at 9 minutes. Perfect for me is when the edges are starting to brown and the middle is set but not firm. I like crispy edges and a soft, chewy center.
If you want them crispier and firmer throughout bake them for the full 10 minutes, or maybe even 11 minutes…just test them as each oven is so different.
Not just for Easter
I am a BIG, BIG fan of Robin’s Eggs but if you wanted to makes these cookies with the traditional Whopper candy you could.
Now I will warn you they will not be nearly as cute and colorful, but they will still be DELICIOUS!!

Get the kids involved
To make this a fun family activity you could let the kids crush up the candy. Put the candy in a large zip closure bag and then let the kids crush them up using a mallet or rolling pin.
You could also use a heavy skillet, like a cast iron one.

These were the best cookies I have ever made! My 3 and 4 year-old helped me and they loved smashing the Robin’s eggs. I refridgerated my dough overnight and 10 minutes of baking time was perfect. This will become a holiday tradition.

these are SO GOOD! i doubled the batch and did one cup of crushed robin eggs and one cup of the easter pastel m&m’s! they turned out delicious and so adorable! i used my smallest cookies scoop (1.5 tablespoons). since i doubled it i should have gotten 6 dozen but only ended up with about 55 (which was still more than enough just not as many as i was expecting). Thanks for sharing, definitely saving it!!
