KETO Snickerdoodle

OK y’all I am obsessed with these cookies… like OBSESSED!  Each bit is a little bit sweet with the perfect bit of cinnamon making these cookies SOOOO GOOD!

Keeping it KETO

Growing up I remember having snickerdoodles all the time, but as an adult I kinda forgot all about these little jewel of a cookie and then last week I was so sweetly reminded of them.  I have some sweet friends and one of them asked me if I could make him some cookies.  His favorite he has had of mine so far are these Molasses Sandwich Cookies but I asked him what else he loves and he said Snickerdoodle, and I was SOLD.

I immediately decided I was going to make him some traditional Snickerdoodles (recipe coming soon) but I also decided I was going to make some I could enjoy… KETO style.  Oh yeah, did I mention each cookie is only 1 net CARB?  

Cinnamon & Sugar

Snickerdoodle cookies are all about the cinnamon and sugar they are rolled in before they are baked.  This little coating, in my opinion, is what sets these cookies apart from all others.

For this KETO version I used the granulated Swerve sugar substitute with a good amount of cinnamon.  The cookie itself is not overly sweet so the coating is what gives each bite that little bit of sweet that makes a cookie a cookie.  Feel free to use your favorite sugar substitute, just adjust net Carbs as needed.

Soft & Pillowy

I love a soft and pillowy Snickerdoodle.  I just think these are the perfect cookies for these little puffy yummy bites.  My dad is also a pillowy cookie kinda guy and he LOVES these cookies, even better than the traditional ones … I promise the recipe is coming soon.

If you are a thin, crispy kinda cookie person than feel free to flatten them out a little more, and you will get a more crisp texture and they bake up.

KETO Snickerdoodle

KETO Snickerdoodles will be your GO TO KETO cookie. They are soft, pillowy cinnamon sugar cookies that will make you fall in love with Snickerdoodles all over again.

Ingredients

1/2 cup butter, room temperature
1/2 cup Swerve (or you favorite sugar free sweetener)
1 1/2 teaspoon vanilla extract
1 egg
1 1/4 extra fine almond flour
2 tablespoons coconut flour
1/2 teaspoon xanthum gum
1/2 teaspoon baking soda
1/2 teaspoon cream of tarter
1/2 teaspoon salt
Cinnamon Sugar
2-3 Tablespoons Swerve (or your favorite sugar substitute)
2-3 teaspoons cinnamon

Directions

Preheat oven to 375
Line baking sheet with parchment paper, set aside
In the bowl of a stand mixer cream together butter and swerve (or sugar substitute of your choice) until light and fluffy
Scrape down the sides
Add in vanilla & egg, mixing until well combined
In a medium bowl whisk together almond flour, coconut flour, xanthum gum, baking soda, cream of tarter & salt
Add flour mixture into butter mixture, mixing until well combined
In a small bowl stir together swerve and cinnamon to toll the cookie dough in
Scoop out dough into tablespoon size balls
Roll dough into cinnamon sugar mixture
Place dough onto prepared pans, 2 inches apart, and gently press down
Bake for 8-10 minutes, or until edges start to brown and center is set
Remove and let cool on pan for 10 minutes and then let cool completely before serving
