Chicken with some Mexican flair
Spring break has started here in my part of the world and I know everyone’s calendar is booked solid wth super fun activities with the kids, & making a super delicious slow cooker meal is a perfect option for this week (or any week)…plus check back tomorrow for a 2nd round recipe using this slow cooker chicken.
It is no secret that I love the slow cooker as I am sure many of you do as well, but this mexican chicken is a new favorite for sure. It is loaded with tons of flavor but it has just a few ingredients, many of which you probably have on hand.
To keep it nice and lean I used boneless, skinless chicken breasts and then loaded them up with seasonings such as chili powder, cumin and garlic powder but the best part of the recipe is all the flavor the tomatoes with green chilies (Rotel tomatoes) adds. Not only is it all the liquid you need, but it gives the chicken so much flavor without any added fat or calories really making this a great dish for everyone. If you are not a fan of Rotel tomatoes feel free to use diced tomatoes and a can of green chilies or 2 cans of diced tomatoes 2 can of green chilies…whatever you prefer.

The beauty of this chicken is you can use it the night you cook it in your favorite tortilla soup (such as this recipe) or in tacos, hard or soft, or on a salad with a great cilantro dressing with fresh sliced avocados. The Hubby and I ate it with some black beans and this Mexican rice the first night and then skinny smothered burritos (check back tomorrow for the recipe)…both of which were so yummy!! You can also freeze the leftovers making for a great mid week quick fix dinner.
Trust me this chicken is a perfect skinny dish that you can use in a ton of dishes without added guilt, making it a perfect slow cooker dish that everyone is sure to love.
