Wesley’s Breakfast Casserole

I always love my time with my AMAZING Niece and Nephew and this weekend was one of the best.  Not only did we get a lot of “chill time” but we played a ton of games, laughed until our bellies hurt and we also cooked… rather the kids cooked.  First they made dinner (stay tuned) and then breakfast.  My niece, Audra, made French Toast Casserole (recipe coming soon) and Wes made this delicious Breakfast Casserole.

Start Your Day Off Right!

They say breakfast is the most important meal of the day, and my nephew loves a good hearty breakfast… sometimes he even has two. So when we started talking about what he wanted to make for his breakfast he started rattling off bacon, sausage, eggs and potatoes so I suggested a casserole. 

The funny thing is my niece and him are not the biggest fans of casseroles but Wes LOVES, LOVES, LOVES this one.

It Starts with Meats, Cheese & Potatoes

To get started we laid out some hash brown patties from Trader Joes on the bottom of the casserole dish, but you could use a bag of hash browns or even tater tots.  Whatever you have on hand.  

Next came crumbed cooked bacon, cooked sausage and cheese.  You can use crumbled breakfast sausage, but we had some sausage patties so we just cut those up.  You could also throw in some veggies at this point, like onion, bell peppers, mushrooms or roasted green chilies for some spice.  It is all up to you.

Don’t Forget the Eggs…

To make this a breakfast casserole there has to be eggs involved.  To make the eggs super fluffy we added in a bit of half & half and of course some salt & pepper and then whisked them a lot.  

Wes had the best time whisking, he thought that was the most fun part for sure.

Just for some extra yummy we also added a bit more cheese… I mean can there ever be too much cheese?
