Baby… It’s Hot Outside
I don’t know about where y’all are but it is HOT this summer. LIKE SUPER HOT! When it is super hot I am not into super heavy meals that weight me down… and this chicken is light but bursting with flavor.
There is a bit of lime, a bit of coconut and some cilantro sliding in here and there, making this a perfect summer dish.
One Pan & Done
In the summer the least amount of time I can have the oven or stove on for is a must, and this dish is all made in one pan, making it quick and super easy to clean up.
I mean is there anything better than a one pan dinner?
Let’s talk flavor… Coconut, Lime, Cilantro… YAY!
I am a BIG fan of coconut & lime together and with this chicken dish it is perfection. The coconut is not overly sweet, it is just the perfect hint of coconut, waking up your taste buds (wow that sounds very foodie).
Next comes the lime, that cuts any sweetness from the coconut and then the pop of cilantro (or parsley, if not a cilantro fan) to make each bite amazing.
There is also a good amount of garlic, because I mean why not?
PS… you could also make this with fish of your choice, just a just cooking time.
The Sauce…
Y’all… the sauce is EVERYTHING! It is velvet smooth, rich, but still light, full of flavor with the perfect hint of lime. I literally could eat this sauce all on it’s own… and maybe I did a little bit… I mean just maybe.
Just a thought but you could add in a bit of heat with some jalapeños in the sauce… just for something a little extra.
