Salted Brownie Cookies are everything you love about brownies but packaged in a cute little cookie.  They are rich, fudgy, chocolate yumminess with the perfect hint of salt and crackle crust.

What is your favorite part of brownies?  For me it is the shiny, crackle top.  There is just something so decadent about it, especially in this cookie.  It is holds together all the chocolate goodness making each bite just PERFECT!

Sprinkle of Salt

The shiny shell is not the only thing that makes these cookies something to remember… there is also the bit of salt in each bite.  For me I love a little salt with my sweet.  I am the one who always adds M&M’s to my movie popcorn, there is just something so satisfying about the combo.

For these cookies I went with a course sea salt to not add the salty bite but also a bit of crunch.  You could use regular table salt or pink salt or even a smoky salt… whatever you have on hand will work.

Sprinkle Always!

To make these cookies even more special you can add on some seasonal sprinkles.  With Valentines just a round the corner I went with a fun Valentines Sprinkle Mix.  I love the different size hearts and colors.  

You could use a fun spring mix for Easter or stars for the 4th and of course leaves for fall.  There are just so many options.  Even if you are not making them for a special holiday they are delicious on their own with the hint of salt.

Ingredients

1 cup Flour
1 teaspoon baking powder
1/4 teaspoon salt
6 tablespoons butter
1 cup semi-sweet chocolate
1/4 cup cocoa
1/4 teaspoon espresso powder (optional, but recommended)
2 eggs, room temperature
1 egg yolk, room temperature
3/4 cup sugar
1/4 cup brown sugar
1 tablespoon vegetable oil
1 teaspoon vanilla bean paste (or vanilla extract)
Sea salt, for topping
Additional chocolate chunks, for topping

Directions

Preheat oven to 350
Line baking sheets with parchment paper & set aside
In a medium bowl whisk together flour, baking powder and salt
In a medium microwave safe bowl melt butter and chocolate together, stirring every 30 seconds until completely melted and smooth
Stir in cocoa and espresso powder
While melting the chocolate in the bowl of a stand mixer mic together eggs, egg yolk, sugars, oil and vanilla bean paste until light and fluffy, about 5 minutes
Pour in melted chocolate and ix until just combined
Add in flour mixture and mix until just combined, scraping down sides as needed, do not over mix
Using a small cookie scoop place mounds of batter onto prepared pans, batter will be more loose than traditional cookie batter but will bake up beautifully
Sprinkle with sea salt
Bake for 8-9 minutes (10 at most) or until the tops are shiny and starting to crack a little
Remove and top with additional chocolate & sprinkles, if using
Let cool for 10 minutes on pan and then move to cooling rack to cool completely

Notes

You can use dark or milk chocolate if you would like
