Grilled Fish
In the past year I have become OBSESSED with fishing. There is nothing like being on the water with a fishing pole in my hand. I don’t even care if I catch a fish, I just love being out there.
Now trust me it is SUPER FUN to catch a lot (see below) but I love it regardless.
Just a Few…
This summer some of my girlfriends and I hosted a fishing tournament of girls vs guys. Needless to say the girls won, I mean look at the fish we caught, and we had the best time ever. It would not have mattered if we caught anything, I always have the best time with these girls.
Quick note, the above fish are black drum, not redfish like I used in this recipe….but I just LOVE this picture so much I had to share it.
On the half shell
When grilling fish we typically grill filets that have the skin on, or on the half shell. When filleting a fish like red fish you can leave the skin on, while removing most of the bones, and then grill it skin side down. This helps keep the filet in tact and the fish tender and not dried out.
If you do not have a filet with the skin on, don’t worry. You can use a skillet on the grill for the same effect.
Season them well
It is important to season the fish well. We keep it simple with just salt, pepper and a little garlic powder. This adds a ton of flavor while still letting the fish shine thru.
If you wanted you could add some chili powder or onion powder.

Enjoy the View
I know summer is winding down and fall is coming, but in the last few moments of summer make sure to take a second and enjoy the view. Whether that be overlooking the water or over a field, your yard or your street just the a second and enjoy it…we are only given a little time here and we should value the time we have. At least that is what I am trying to do.
