Bacon Cheeseburger Casserole (KETO/Low Carb)

Who doesn’t love a good casserole.  I know I do.  They are my comfort food and this Bacon Cheeseburger has everything a good casserole should have, and then some.

Bacon, please

This casserole all starts with bacon.  I used 1/2 lb of bacon and cut the strips into small pieces and then cooked it all in a large skillet.  If you leftover bacon you can use it, but I love how the bacon flavor becomes the base of the casserole when you cook it in the same skillet as the meat.

The bacon adds so much flavor and really elevates this casserole to the next level.  My moms hamburger casserole never had bacon in it…bit I will never make another one without it again.

Cheesy Goodness

As any good cheeseburger there is cheese in every bite.  It starts with the hamburger mixture where we added in cream cheese.  This helps to make the filling super creamy, rich and SO GOOD.  

To add even more yummy cheese I topped it with more cheese.  I used a blend of cheddar and monterey jack but you could use whatever cheese you prefer.  To add a little spice a shredded pepper jack would be good or all cheddar would work as well.  Swiss cheese would work as well.

Everyone will love it

This dish will be a favorite of adults and kids alike.  It is also KETO/Low Carb Friendly making this a recipe that everyone can enjoy.  No one will believe this is what KETO/Low Carb looks like.
