Triple Chocolate Cookies
IT IS FINALLY FALL! I love all the fall colors, the pumpkins, the leaves, the scarecrows…all of it. I even love some of the scary parts of Fall, like googly eyes and a goblin or two…but nothing too scary. To welcome in everything fall and celebrate a little of the scary I give you Triple Chocolate Chip Cookies.
For the record… these cookies are good anytime of year, I just really love how awesome they are with the fall colored M&M’s and the eye ball candy.
All the chocolate
I love, love, love chocolate. Dark chocolate, milk chocolate, white chocolate, semi-sweet chocolate, bittersweet…I love it all. For these Triple Chocolate Cookies I went with dark, milk and semi-sweet. I love the balance of bitter and sweet and creamy between all three.
If you wanted to replace one with white chocolate or just add in white chocolate chips you could for sure for an even better cookie. You could also just use one of of chocolates…whatever you love.
The perfect bite
These cookies are not too big and not too small, they are just the perfect size. With all the chocolate in them they are pretty rich, making them the perfect little treat that everyone is sure to love.
I love adding in the M&M’s for some extra color and a little extra chocolate but if you don’t have any or want to use recess pieces or another candy you could, such as the eye ball candy. My niece and nephew LOVED them!

Spooky Chocolate Cookies
Ingredients
- 1 1/4 Cup All-Purpose Flour
- 1/4 Cup Cocoa Powder
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1 Cup Semi-Sweet Chocolate Chips
- 2 Tbsp Butter (chopped into small pieces)
- 2 tsp Vanilla Bean Paste (or vanilla extract)
- 1/2 Cup Sugar
- 1/3 Cup Brown Sugar
- 2 Eggs (room temperature)
- 2 Tbsp Half & Half (or milk of your choice)
- 1 Cup Milk Chocolate Chips

Instructions
- Line a cookie sheet with parchment paper
- Preheat oven to 300℉
- In a medium bowl whisk together flour, cocoa powder, baking powder and salt – set aside
- In a microwave safe bowl combine chocolate chips and butter
- Heat for 1 minute, stirring every 15-20 seconds until chocolate and butter are melted and smooth – be careful to not overheat
- Whisk in vanilla bean paste and sugars until well combined
- Add in one egg at a time, mixing until comepletely incorportated
- Whisk in milk
- Add in flour mixture and stir until just combined
- Add in milk chocolate chips, mixing until just combined
- Using a small cookie scoop place mounds of dough onto prepared pans about 2 inches apart
- Bake for 15-18 minutes, or until edges are just set and top is shiny
- Immediately press in any FUN extras you like
- Let cool completely before serving (if you can)
