Herb Roasted Carrots

Ingredients

Fresh Carrots, I prefer to long skinny ones

Tbsp
Oilive OIl
1
Tbsp
Butter, melted
1
Tbsp
Herbs de Provence
(or 1/4 tsp each oregano, basil, parsley & thyme)
Instructions
Preheat oven to 425
Line a rimmed baking sheet with parchment paper, set aside
Wash & dry carrots, trimming as needed
In a large bowl mix together olive oil, butter and herbs de provence
Toss carrots with herb mixture, making sure carrots are evenly coated
Spread carrots into an even layer onto prepared pan
Roast for 20-25 minutes, or until carrots are tender and starting to brown
Remove and serve immediately or at room temperature if needed
