Spiced Molasses Sandwich Cookies
I have a new favorite cookie… Spiced Molasses Sandwich Cookies! Trust me… you will LOVE them! The perfect blend The cookie itself is quite sweet, especially with the course sugar, but the pumpkin-butter buttercream is the perfect balance. It is just a little sweet with a good bit of spice making each bite the perfect balance. If you are planning on just eating the cookies and not making them into sandwich cookies you could leave off the sugar until right when you bring them out of the oven. The Holidays call for 2 things in my book… pumpkin and buttercream. One of my favorite pumpkin treats is Trader Joes Pumpkin Butter. It is a little sweet with a little spice making it AMAZING! When you add it to this buttercream recipe it is AMAZING! Not your normal filling I love a good sandwich cookie with a good filling. I love the richness and creaminess it brings to anything and everything you add it to. a little punkin butter fun
OK it is no secret that I LOVE pumpkin anything and everything…I love pumpkin pie, pumpkin muffins, pumpkin cookies, pumpkin pasta, but I especially LOVE pumpkin butter. My obsession with pumpkin butter started several years ago on a quick trip to Williams Sonoma to pick-up some kitchen towels (they are he only towels I use) and I was asked to try their pumpkin butter.
