• Winter Spiced Steel Cut Oats

I am ALL about oatmeal, especially steel cut oats.  I literally can eat them morning, noon and night…and these Winter Spiced Oats are perfect for a chilly morning by the fire.       all about the spices… I love all the warm spices… think chai tea spices.  For this oatmeal I wanted it to be flavorful enough where I didn’t have to add in a lot of sugar to make it yummy.  So the spice fun began. The spice blend I landed on (after several attempts) is cinnamon, cloves, ginger, nutmeg, cardamon.  You could also use pumpkin pie spice with additional cloves and cinnamon if you wanted.   You could also…

  • Oatmeal Cranberry Bran Muffins

Oatmeal Cranberry Bran Muffins are my answer to my mom’s bran muffins.  Growing up mom always had these Bran Muffins in the refrigerator ready to bake, well I have updated them just a bit. Cranberry + Oatmeal + Bran = Yes! I love a good muffin for breakfast, or a snack, but I especially love them when there are cranberries, oatmeal and the sweetness of my bran muffins.  The cranberries and oats really help cut the sweetness of the muffins while adding in great texture and a bit if tartness.  If cranberries are not your thing you can use dried cherries, or another dried berry if wanted, or leave out…

  • Cheeto’s Snack Mix

Who doesn’t love a good snack mix?  I know I do!!  This Cheeto’s Snack Mix is one of my most favorites and I know you will love it too! YES!  You are seeing Cheeto’s!! First… if there is Cheeto’s in anything I am probably going to love it.  I am sucker for a Cheeto for sure.  I am an original Cheeto girl but I will not turn down a puffy cheeto or a spicy one.  Actually, the spicy version would be devious in this snack mix… I am going to have to try that next time. So many YUMMIES!! Now I know when you look at the ingredient list it may seem a little…

  • Blueberry Snack Bars

I am so obsessed with everything berry right now.  Every time I walk into my grocery store or my local Farmer’s Market I am overwhelmed with how beautiful the berries are right now.  Strawberries, blackberries and blueberries, lots of blueberries.   Blueberry, Love I love blueberry anything and at anytime but I really love them for a snack.  I always try to keep them on hand for a quick bite when the afternoon is just dragging on or for a late night snack.  A few weeks ago I found them on sale and decided to testa  few recipes to make the blueberry shine. After several tests on several recipes I…

Spring is finally here…well at least according to the calendar.  I don’t know about you but I am ready for some warmer weather and the sun to come out for more than 1 day at a time.   To celebrate Spring I decided to make some super fun cookies with the adorable Spring M&M’s.   Just the colors of the M&M’s make me happy. • skinny oatmeal n muffins

Mornings are made for muffins…like these blueberry muffins, strawberry muffins, chocolate chip muffins or even these bran muffins  but sometimes muffins can be really full of all that stuff we don’t need (i.e. fat, calories & points)…but don’t worry I found these muffins!   First off I love oatmeal & I love muffins so the idea of putting oatmeal in a muffin made me a little giddy and then add in some brown sugar and maple syrup and I get super giddy.  Not only are these muffins loaded with things I love but they also taste anything but skinny, they actually taste very indulgent and you might even have some thoughts of guilt…

  • let’s go…go…go for some oatmeal

Let’s talk about breakfast.  Do you eat breakfast everyday?  Do you LOVE breakfast or is something you have to do?  Do you change it up or do you eat the same thing everyday?  Are you always in a hurry in the morning and need something that is easy and already done when you wake-up?  How about overnight oats that are ready when you get up? For me I am eating breakfast everyday…NOW, but that has not always been the case.  Breakfast is not something I LOVE or think about or crave but in the last few months all of that has been slowly changing.  For the New Year I have…

  • a little naughty (and nice) snack mix…

Ok I have to admit something…I have a secret love for snack mix, the sweet and salty snack mixes.  I love the mix of sweet and salt in each bite in really anything but for snack mix I am especially a fan, and this particular mix is a FAVORITE of mine for sure.   Now I know when you look at the ingredient list it may seem a little strange, but trust me when you take your first bite you will totally understand why I love it.  The oatmeal cereal mixed with the cheetos, peanuts and pretzels all by themselves make for a great mix but when you add in…
