• Keto Mexican Cauliflower Rice

Mexican food is my go to.  I love chips and quest, enchiladas, fajitas, quesadillas, guacamole…all of it.  Since I have started my KETO journey it has been a priority of mine to find yummy alternatives to fill my Mexican cravings and this Cauliflower Rice is perfect. A new way to rice Everywhere you look cauliflower rice is being talked about.  People are using it in all sorts of recipes, some of which I cannot wait to try (so be on the look out).  My first time to use cauliflower rice was in this amazing casserole and now I am obsessed with the mexican style side.  It brings all the best…

  • Chicken Flautus

A few weeks ago I got to spend the week with some of my favorite people.  We fished, cooked and hung out and it was AMAZING!  One of the dishes that my sweet friend Shannon made were these Chicken Flautus and they were so good I have to share them with you. It all started here… To make these flautus super special Shannon made her own version of Rotel that the chicken would eventually soak up.  Honestly I thought she was crazy to make her own and questioned why she wasn’t just using the favorite canned version but she assured me I would understand once I tasted it and she…

  • red rice for dinner tonight…yes, please

Over the last few years I have become quite the fan of rice.  We did not eat it a ton growing up but lately I can’t get enough of it. Red rice..LOVE, LOVE, LOVE The Hubby and I LOVE anything Mexican.  I mean anything…nachos, enchiladas, tacos (in all forms), burritos, fajitas…all of it.  One thing that goes great with all these dishes is rice, and especially red rice. Red rice is one of our new favorites for sure.  It is loaded with tons of flavor, but it is super easy to make, making this a dish perfect for a busy week. What makes it so special? First off I almost always…

  • one dish with so many options

It is cold outside, a brisk wind is blowing and maybe even a few snowflakes are falling (at least that is my vision of winter from my warm weather Texas world) and that means it is SLOW COOKER weather!! My favorite slow cooker dishes are the ones that can be used for more than one dish.  This Mexican Slow Cooker Beef not only tastes amazing but can be used for so many dishes.  This is a must make ASAP! Let it go One of the best parts of slow cookers is that you throw everything in and then forget about it.  I love recipes like this so much, especially for those…

  • Homemade is so much better

I could eat some type of Mexican food EVERY meal.   Given how much I love Mexican food I have been working on a staple in my kitchen…enchilada sauce.  Finally I have created one that I LOVE and that is perfect for all my casseroles, soups and of course, enchiladas. Homemade is worth it First off…look at the color.  Isn’t it beautiful?  I love the deep reddish, orange color with the bits of spices and herbs running through it.  It adds a beautiful color to your dishes for sure. Secondly the taste.  This sauce has a little heat from the chili powder, but not too much.  It also has a…

  • stack it up

It is Monday!!  Where did the weekend go?  Also, did you know that simmer is also over?  Yay…it is crazy school starts in 2 weeks. Monday needs easy…EVERYTHING When Monday rolls around I know I love it when I can feed my peeps something yummy and EASY…because lets be real who wants to slave away for hours in the kitchen on Monday. When I was growing up my mom loved making casseroles…and now I love them so much.  They are perfect for a family, as they can feed a lot.  They make great leftovers…meaning you can have meals for a couple of days (always a plus) and you can usually…

  • brownies always make for a sweet finish

Sweets are a must have for Cinco de Mayo…after indulging in something cheesy and yummy I have to finish it off with something sweet and its even better when there is a little kick involved.   Truth be told…I also love to have a margarita or two as well, but since I can’t have alcohol right now (it doesn’t mix with pain meds evidently) I will have a double dose of brownies instead. Now these brownies are not your ordinary box brownies, or these caramel brownies or even these oreo brownies they are super fudgy with a little kick.    Ok I hear ya…brownies with a kick?  What kind of…

  • casserole = happy Cinco de Mayo

Cinco de Mayo is just around the corner and that means it is time to indulge a little in some delicious Mexican fare.  As I have mentioned many times before I LOVE Mexican food…and this casserole helped foster that love when I growing up. Honey (my mom) loved casseroles as they really are perfect for a busy family and we were definitely busy.  My brothers and I were involved in tons of activities which made family dinner hard but so important.  Some of our favorite casserole were chicken spaghetti, or this king ranch chicken casserole, but this cheesy mexican chicken casserole with nacho chips was one of my favorites for sure.   It…

  • stay in for this favorite…fajitas

The Hubby has started cross fit in the last couple of months…yes I said The Hubby is doing cross fit.  Now just to be clear, I am not doing cross fit The Hubby is doing cross fit and I am so, so proud of him.  He has been so committed and goes at 6:00 AM, 3 days a week and in turn I have been trying to feed him a little better (with a  few indulgences here and there). One of the things The Hubby has been really craving and needing is protein and I think he could eat grilled meat 6 times a day, and especially fajitas.  He has…
