It is Biscuit Time! I don’t know about you but I am always down for a good biscuit.  Whether it be in the morning or at dinner biscuits are ALWAYS a good idea.    They are good with gravy, jam, honey or just butter. I mean can you think of a time when biscuits are not a good idea? You copied…

  • A Christmas Tradition

Christmas is just around the corner and I think I am going to have to make these again.  Don’t be scared…you can do this. It is all about Christmas patience Homemade cinnamon rolls are 1000% better than the canned version, but beware you have to plan ahead.  You need several hours (I started the process the night before) to let the dough proof and get ready to roll up into rolls.    SO what is proofing you ask?  Proofing is when you let the dough rise.  For this dough we are wanting it to rise, or proof, quite a bit.  The goal is at least double from its original size.…

  • Homemade Ice Cream has never been so good (& easy)

Summer is officially here and it is ICE CREAM TIME!!  Honestly it is always ice cream time in my world, but especially in the summer.  I mean just look how refreshing it looks…it is the perfect summertime treat!! Homemade and OH SO EASY! Growing up my dad would always make homemade ice cream for every get together we had in the summer.  Way back then he used one of those old fashioned ice cream makers where you had to sue rock salt and it seemed to take FOREVER (at least to a kid it seemed like forever)!   Now I use a much smaller machine and it is done in…

  • hamburger helper all grown-up

Did you have hamburger helper as a kid growing up?  If you did I have to tell you I am a little jealous.  I always wanted my mom to make us hamburger helper, but she just never did.  Ever since I have been a little obsessed with it and now I have made a homemade version that is even better than the box…just trust me, it really is. I still remember my first time The very first time I EVER had hamburger helper was my freshman year in college.  I walked into a friends house and they were making dinner.  It smelled amazing and I couldn’t wait to see what…

  • No taco packets needed for this!!

OK so I am the first to admit that I am a fan of the packaged spice mixes.  I mean lets be honest they are so easy and can make an ordinary dish a super star in no time.  Well as much as I am a fan I decided to break out on my own and make my own taco seasoning. Why, you ask? So I was in a hurry one time and grabbed the super spicy taco mix at the store.  Unfortunately I didn’t look at the package when I got home and added it to my ground beef. Well as you can imagine when The Hubby took his first bite…

It starts with butter… So first…

  • Homemade is so much better

I could eat some type of Mexican food EVERY meal.   Given how much I love Mexican food I have been working on a staple in my kitchen…enchilada sauce.  Finally I have created one that I LOVE and that is perfect for all my casseroles, soups and of course, enchiladas. Homemade is worth it First off…look at the color.  Isn’t it beautiful?  I love the deep reddish, orange color with the bits of spices and herbs running through it.  It adds a beautiful color to your dishes for sure. Secondly the taste.  This sauce has a little heat from the chili powder, but not too much.  It also has a…

  • rice gone wild

Are you a rice or a potato person?  I am 90% of the time a potato gal except when we are talking about wild rice. not in a box? There is always a box of that Uncle’s Wild Rice in my pantry.  I  sometimes whip it up for a quick side.  It may have been fixed it for my lunch a couple of times as well.    I mean it really is just a perfect little side (or lunch)….and then I discovered something at the store one day. Just imagine it I am walking down the grain aisle to grab some couscous and sitting right there is a bag of wild rice.  But wait, it’s…

  • Easy Peasy Pie Crust

Do you make your own pie crust?  Did you just look at me (thru the computer) like I am a crazy person?  I know, I know, why make your own crust when you can buy it?  Well, the short answer is…it is so much better and its easy!! It’s easy? YES!!  You throw everything into a food processor and voila your done.  I mean you still have to roll it out but pretty much it’s done. I love this because you don’t really have to worry about over working the dough and it has come out perfect each time I have made this version.  Plus I am little crazy and anytime…
