Taco Tuesday is here!! For me this is definately a favorite. I love, love, love anything with a Mexican/Tex-Mex flair, so a whole day devoted just to tacos sounds like a perfect day. Not too long ago I was strolling the aisles at my local Trader’s Joe and came across a thai peanut salad dressing. Now I know this doesn’t sound too special but to The Hubby it is was a HIGE find. rice is a favorite around here…and we have made our fair share. Some of ur favorites are this Mexican version, or this cheesy one and & especially this cilantro lime version…but this green version is a new must make. I just love the idea of anything smothered. I mean I did grow up in the south where we have smothered pork chops, smothered beef tips, smothered chicken…really anything that will sit still we will smother if given the chance. It just sounds so decadent and bad for you…but the beauty of these smothered burritos is that they are very decadent but skinny!!
