• it’s a nacho weekend

I LOVE NACHOS!  There you go, I admit it.  They are one of my favorite items to order and make when I am craving tex-mex. Now a nacho is not just a nacho, there are tons of varieties of nachos you can have but this one is a favorite for sure. meat or NO meat? Now if you were to ask The Hubby he would say meat, and his choice would be seasoned ground beef.  Honey (my mom) would say meat, and her choice would be beef fajita meat.  My nephew is a no meat kinda toddler, and me…well I am up for any of the above. One of my…

  • cheesy bread goodness

For me, one of the best parts of eating Italian food out is the bread.  My favorite is the crusty bread, slathered in butter with mealy cheese everywhere.   There is one small local Italian restaurant that inspired this bread that makes everything homemade.  Their pasta is homemade, their sauce is homemade, their desserts are homemade and their bread is homemade. It’s all about the butter… Butter is what makes this bread so, so good.  I use real unsalted butter (I typically only have unsalted butter in my refrigerator), not the fake stuff but real butter.  To make it easy to spread I melt the butter.  The melted butter seeps…

  • slow cooker ranch yumminess

Just because it is summer doesn’t mean you can’t enjoy the best of all your slow cooker has to bring you.  I mean what is better than being out all day playing (or working) and coming home to dinner being 90% done and knowing that everyone is going to love it…I don’t know about you but that sounds pretty good to me. Not too long a go I started making my own Ranch seasoning and ever since then I can’t seem to stop making everything with it, but favorite combo is with chicken.  I just love how it pairs with the flavors and especially in this slow cooker dish. The…

  • one pan & done alfredo

Who doesn’t love a one pan meal…I mean c’mon it comes together with just a few steps and clean-up is super fast making this a perfect dinner option for a busy day. Over the years I made my fair share of one pan meals like this one pan spaghetti and this one pot sausage & potato stew but one of my most favorites it this cheesy one pot alfredo pasta.   Alfredo sauce is my favorite sauce to put over noodles and when I can make everything in one pot it makes it even better. Now as we all know this cheesy and decadent sauce can be a little higher in…

  • lasagna in no time

Do you love lasagna?  Do you love how long it takes to make a traditional lasagna?  Probably not (at least I know I don’t)…so how about a lasagna that comes together in less than a hour and brings together all the best flavors of your favorite traditional lasagna?  Yes, that sounds good?  GREAT… then I have a perfect recipe for you. This recipe came together very quickly…I thought The Hubby had a dinner meeting but I was wrong and he came home hungry and ready or dinner. Thankfully I had been to the store earlier in the day and I had picked up some sausage, I just like to have it…

  • casserole = happy Cinco de Mayo

Cinco de Mayo is just around the corner and that means it is time to indulge a little in some delicious Mexican fare.  As I have mentioned many times before I LOVE Mexican food…and this casserole helped foster that love when I growing up. Honey (my mom) loved casseroles as they really are perfect for a busy family and we were definitely busy.  My brothers and I were involved in tons of activities which made family dinner hard but so important.  Some of our favorite casserole were chicken spaghetti, or this king ranch chicken casserole, but this cheesy mexican chicken casserole with nacho chips was one of my favorites for sure.   It…

  • healthy + chips = new favorite

The word healthy was a yucky word to me for many years.  Healthy meant veggies, no flavor and boring.  Did you ever think that?  Has the word healthy been hard to swallow before?  Well don’t worry…it is soon to become one of your favorite words because now healthy can be chips too! One of the first veggies I first fell in love with was zucchini.  It started with the fried appetizer version at a great local dive where my grandparents lived when I was a kid, and eventually it moved to a baked version.  When I say eventually I mean EVENTUALLY…it took like 20 years, but I did eventually get there.…

  • chicken + grilled cheese = perfect sandwich

One of my most very favorite things to eat in the whole world is a sandwich and a grilled cheese is at the top of the list.  OK, I know that sounds a little simple from a “food blogger” but I LOVE a grilled cheese sandwich.  There is something so yummy to my tummy about a crunchy buttered bread with ooey gooey cheese…and when you add other yummy stuff to that combo it only gets better. Last week I made one of the most delicious grilled cheese sandwich I have ever had and it was all by accident…I just love it when that happens.   So it all started with some thawed…

  • a mac-n-cheese treat for all ages…

Comfort food is always a treat and when we were growing up mac-n-cheese & sausage was a a treat for sure.  Back then my dad was the master of mac-n-cheese.  He would make it on the stovetop with noodles, velveeta and cheese and we thought this was the best mac-n-cheese EVER.  We loved how creamy it was and how cheesy it was…even better my dad would grill up some link sausage and it was a perfect dinner.   As I have grown up my taste have changed some but mac-n-cheese is still a favorite for me…and when paired with sausage it is still a treat.  To make it a little more…

  • an au gratin star is born…

The life of a food blogger is not as glamorous as some might imagine, my poor Hubby rarely gets a repeat meal (even his favorites), sometimes a recipe has to be made several times before it is right, and sometimes we even celebrate a Holiday early so I can get all the recipes ready to post… but having these au gratin potatoes several times is well worth it. This year we celebrated Easter a week early and had my brother, sis-in-law, their precious kids, sis-in-laws mom and my parents.  It was a great day filled with lots of great food, but the star of the dinner (besides the ham, carrots, green…
