    Cinco de Mayo is just around the corner and that means it is time to indulge a little in some delicious Mexican fare.  As I have mentioned many times before I LOVE Mexican food…and this casserole helped foster that love when I growing up.     It is no secret that we love to grill here in Texas.  I mean c’mon we kinda live on grilled everything in the spring & summer.  We will grill anything that will sit still on the grill (or not fall through the grates)….fruits such as pineapple.
