My mom loved them and my grandmother loved them so anytime we could have them we would. I am still all in on the summer veggies that are everywhere right now and so to celebrate them I heated up to grill to let them shine. It is still summer Y’all I know I am so ready for cooler weather (& pumpkin spice everything) but one of the best summer things happening right now are the veggies. Skillet Brussels Sprouts and Bacon are the perfect quick side for dinner tonight. Literally can be ready in 20 minutes! KETO baby! I have been craving Chinese food A LOT lately. My typical go to is a loaded fried rice, I just love all the flavors and textures together in each bite. On my KETO journey a traditional fried rice is not going to work but this KETO Loaded Fried Rice is perfection! I LOVE, LOVE, LOVE risotto. I love how decadent, rich and full of flavor it is. Traditional risotto (like this recipe) is not KETO friendly but when you use cauliflower rice it becomes VERY KETO friendly. Ok it is official I am a LOVER of Cauliflower. I love this Chicken and Cauliflower Casserole and the Mexican Cauliflower Rice but this loaded casserole is my FAVORITE! Roasting is key There are a ton of loaded cauliflower casseroles on pinterest and they all sound amazing but for me cauliflower is at its best when it is roasted.
