• green beans in no time

Green beans are a staple in our home.  The Hubby and I love them, my parents love them and my nephew REALLY loves them.  They were one of the first foods he ate and still asks for them all the time.   Over time we have fixed them all sorts of ways like these delicious green bean bundles, or my brothers favorite green bean casserole  or one of my favorites simply roasted green beans but now we all have a new favorite…these skillet green beans.   The beauty is they start out in the microwave for a quick steam, and then you finish them in a skillet until they are just…

  • sheet cake updated for Honey

My mom’s birthday was not too long ago and we had a big family dinner to celebrate her.  My brother and sis-in-law grilled out my mom’s favorites (ribs) and I was responsible for dessert and a side (the side recipe will come soon).  For the dessert I asked her what she wanted and she said sheet cake…sheet cake really? THE DARKER THE BETTER (AT LEAST FOR ME) In my mind I was thinking about a beautiful layered cake, maybe cupcakes or a even a pie but mom wanted sheet cake…so I decided to take our family’s favorite sheet cake recipe and amp it up a bit…to make it a dark…

  • Wes & the Asparagus

Two of my most favorite people in the whole world are my niece and nephew Audra & Wesley.  Audra is just about 8 months and Wesley will be 2 next week and I am obsessed with them.  I try and talk to Wes once a day on the phone and see them as much as I can, and of course I am constantly spoiling them as much as I can.  One of my favorite helpers One of my favorite things to do for Wes is to cook for him.  From the time he could start eating real food I would bring him almost everything I made him…and sometimes when he see’s me he…

  • A slider to remember

So there has been a ton going on my life lately and sometimes there just doesn’t seem to be the time (or energy) to make a big dinner so instead lets make a little dinner with BIG flavor….Blue Cheese Bacon Slider! A slider is a favorite for me and The Hubby.  We eat them out and at home.  Sometimes we like just a traditional cheeseburger slider with american cheese, other times we take it up a notch with some grilled onions, a fancier cheese, some veggies and maybe even an egg…but my all time favorite slider is blue cheese with bacon.  There is just something so delicious & yummy about the…

  • Bacon + Jam = AMAZING

Bacon & Jam together at last…yes you read that right today is all about Bacon Jam.  For those of you who have not had the distinct pleasure of enjoying this wonderful jam then you are going to be in for the treat of your life (ok at least this week, ok maybe today) but is really is so yummy!! I first came across bacon turned into jam at a local hamburger place.  They were putting it on their burgers instead of slices of bacon.  Now I was a little nervous when I ordered by first bacon jam burger…but all that went away after my first delicious bite.  The jam brings…

  • Oreo Lasagna

There are certain foods I CANNOT have in my house because I will eat all of it and  this dessert is full of one of those sinful treats…OREOS!  I love all Oreo’s and yes I think I have tried most of the varieties….but my favorite is the original.  There is just something about the chocolate wafers and that delicious creamy middle…I just love them. A surprise…. The Hubby loves Oreo’s as well, so when I told him about this dessert he was so excited and asked me to fix it right away, & has asked me to make it several times since, so it is definitely Hubby approved.  The last…

  • lasagna in no time

Do you love lasagna?  Do you love how long it takes to make a traditional lasagna?  Probably not (at least I know I don’t)…so how about a lasagna that comes together in less than a hour and brings together all the best flavors of your favorite traditional lasagna?  Yes, that sounds good?  GREAT… then I have a perfect recipe for you. This recipe came together very quickly…I thought The Hubby had a dinner meeting but I was wrong and he came home hungry and ready or dinner. Thankfully I had been to the store earlier in the day and I had picked up some sausage, I just like to have it…

  • brownies always make for a sweet finish

Sweets are a must have for Cinco de Mayo…after indulging in something cheesy and yummy I have to finish it off with something sweet and its even better when there is a little kick involved.   Truth be told…I also love to have a margarita or two as well, but since I can’t have alcohol right now (it doesn’t mix with pain meds evidently) I will have a double dose of brownies instead. Now these brownies are not your ordinary box brownies, or these caramel brownies or even these oreo brownies they are super fudgy with a little kick.    Ok I hear ya…brownies with a kick?  What kind of…

  • casserole = happy Cinco de Mayo

Cinco de Mayo is just around the corner and that means it is time to indulge a little in some delicious Mexican fare.  As I have mentioned many times before I LOVE Mexican food…and this casserole helped foster that love when I growing up. Honey (my mom) loved casseroles as they really are perfect for a busy family and we were definitely busy.  My brothers and I were involved in tons of activities which made family dinner hard but so important.  Some of our favorite casserole were chicken spaghetti, or this king ranch chicken casserole, but this cheesy mexican chicken casserole with nacho chips was one of my favorites for sure.   It…

  • healthy + chips = new favorite

The word healthy was a yucky word to me for many years.  Healthy meant veggies, no flavor and boring.  Did you ever think that?  Has the word healthy been hard to swallow before?  Well don’t worry…it is soon to become one of your favorite words because now healthy can be chips too! One of the first veggies I first fell in love with was zucchini.  It started with the fried appetizer version at a great local dive where my grandparents lived when I was a kid, and eventually it moved to a baked version.  When I say eventually I mean EVENTUALLY…it took like 20 years, but I did eventually get there.…
