Easter Goody Bars (Gluten Free Option)

Easter is literally just a round the corner (like next week) and these Goody Bars are just what you need.

Goody Bar Time!

If you know about Goody Bars then you know just how yummy they are.  

First can we talk about the oatmeal crust/crumble?  It is buttery, just sweet enough and the perfect envelope to the chocolate center.  I did use Gluten Free Flour and they turned out amazing.  You can use all-purpose if you would like.  Secondly, the chocolate center.  Not only is it chocolate but it is also mixed with sweetened condensed milk (or nectar of the God’s), vanilla, salt and a little more butter.  There can never be too much butter.  

Last but not least… the M&M’s and sprinkles (if you want).  To finish these bars off and make them perfect for Easter throw on some fun Easter M&M’s and Sprinkles to make them Easter Bunny ready.

These will be hit with adults and kids alike and a go to recipe all year long for you.

Goody Bars

Quick & easy oat bars with a rich chocolate center perfect for a sweet treat, but especially Easter!

2 cups quick cooking oats (DO NOT use old fashioned oats)
1 1/2 cups all purpose flour (or GF 1:2:1 flour)
1 cup brown sugar
1 teaspoon salt
1 cup butter, melted
1 cup semi-sweet chocolate chips
1 can (14 oz) sweetened condensed milk
2 Tablespoons butter
1 teaspoon vanilla bean extract
1 1/2 cups Spring M&M's
Easter sprinkles (if using)


Preheat oven to 350
Line a 9x13 pan with parchment paper
In a large bowl mix together oats, flour, brown sugar, salt and melted butter until mixture resembles course sand
Press 2/3 of the mixture into the bottom of the prepared pan
In a small saucepan heat chocolate chips, condensed milk, butter and vanilla bean extract over medium heat until melted and well combined, stirring constantly
Pour chocolate mixture over at mix in pan
Sprinkle remaining oat mix over chocolate
Sprinkle M&M"s and sprinkles over the top and gently press into mixture
Bake for 20-24 minutes, or until the edges are just starting to brown
Remove and let cool in pan for at least 20 minutes
Remove from pan and cut to serve


You can use any M&M's or sprinkles you want for a year round treat
