The Great Sugar Cookie Debate…

Are you a thin & crispy sugar cookie person or a fluffy and chewy sugar cookie person?  For me I like both.  

My MeeMaw would make me her sugar cookies every time I would come see her (you can find the recipe here), and they were thin & crispy and SO GOOD!  Like super yummy, I would eat all of them and not share with anyone.

On the other hand we had a family friend who would make more of a lofthouse kinda cookie with rich buttery icing, these were my dad’s favorite sugar cookies.  I love how you can use colored frosting to make them perfect for any Holiday or Season. 

So in the end, I am both.  I like both and these Gluten Free Sugar Cookies kinda bring both together into one cookie.

Gluten Free and So Good!

I have found in my adventures in gluten free baking that many times the cookies, brownies or cakes can be dry,  but these cookies are anything but dry.  They are rich, buttery and just sweet enough.  

Also in my GF adventures I have found there is one flour that I like far above the rest is the Bob’s Red Mill 1 to 1 Baking Flour (you can purchase it here).  It seems to be the best as far as truly being a 1 to 1 substitute for all purpose flours and also seems to be the least “trying” of the GF options.  It is also one of the most affordable, especially when I get it on Amazon.

If you are not GF you can use regular all purpose flour and the results will be the same, I tried it.

All about the sprinkles

The first time I made these cookies they were for a little Valentines get together so I used these sweet red & white hearts and then the next time I decided to go full on spring with the pastel ones.  The options are endless making these cookies perfect for any Holiday or Season.

You could also color the dough using a gel color for even more Holiday fun.

Gluten Free Sugar Cookies

Gluten Free Sugar Cookies have never been better, these are rich, buttery and perfect for any special occasion or Holiday.

Ingredients

1 teaspoon baking soda
1 teaspoon salt
1 cup butter, room temperature
1 cup sugar (plus more for rolling)
1 egg
2 teaspoons Vanilla Bean Extract (or vanilla extract)
Optional
Seasonal Sprinkles
Gel Food Coloring

Directions

Preheat oven to 350
Line cookie sheets with parchment paper
In a medium bowl whisk together flour, baking soda and salt to combine
In the bowl of a stand mixer cream together butter and sugar until light & fluffy, about 5 minutes
Add in egg and vanilla and mix until just combined, scraping down the sides as needed (add in food coloring now if using)
Add in flour in 2-3 batches, mixing until just combined
Using a cookie scoop, scoop out balls of dough and roll into a ball
If using seasonal sprinkles roll half the ball in granulated sugar (as seen in picture above) and then the top half in the seasonal sprinkles
Place onto cookie sheet and gently press down balls, just a little bit, to form more of a circle instead of a mound (see pic above)
Bake for 10-12 minutes or until the bottom just starts to brown
Remove and let sit for another 5 minutes them remove to a cooling rack
ENJOY!!

Notes

You can use regular all purpose flour if wanted
