Instant Pot Black Eyed Peas

Black Eyed Peas are a must every New Years Day & this should be your go to recipe.  This year I decided to try a new recipe & let me tell you it is so, so good and all made in the Instant Pot.

Black Eyed Pea tradition…

Every year my parents would make black eyed peas for New Years Day with cornbread, this is my favorite cornbread recipe.  My mom would always use the leftover ham from Christmas which made the black eyed peas AMAZING!  For this recipe I used ham and smoked sausage.  I mean why not make them even better.

Perfect in the Instant Pot

Black Eyed Peas can take a while to cook.  Growing up my mom would cook them all day and we would have them for dinner… but wow how things have changed.  These beans are done in under a hour.  Yes, you read that right done in under a hour. 

This recipe is just one of the many reasons why I love my Instant Pot more and more each time I use it.

Better the next day

Don’t get me wrong these are amazing the minute they come out but the next day they are even better.  The flavors come together the longer it sits and makes for a complex, perfectly seasoned black eyed pea dish you will want to make again and again.

If they get too thick as they sit you can heat them up on the stove and add in chicken stock or water to get them to the consistency you desire.  You can also add in some kale or collard greens as well to make it a soup perfect for the winter.  Black eyed peas are not just for New Years anymore.

Instant Pot Black Eyes Peas

Instant Pot Black Eyed Peas are the perfect quick fix black eyed pea recipe that is loaded with tons of flavor and perfect for new years or any day!!

Ingredients

1 lb dry black eyed peas
2 tablespoons olive oil, divided
1 lb smoked sausage, cut into large chunks
1 lb leftover ham, or ham hock, cut into large chunks
1 onion, chopped
2-3 garlic cloves, minced
1 tablespoon all purpose seasoning
6 cups chicken stock, or water
Optional
Chopped kale or collard greens

Directions

Rinse beans in colander and let drain
Turn instant pot onto saute
Add in 1 tablespoon olive oil
Brown sausage and ham, working in batches if needed, removing to a plate as browned
Add in remaining olive oil
Saute onion for 2-3 minutes, stirring often
Add in garlic and cook for an additional 1-2 minutes
Turn off saute
Add back in sausage & ham, with reserved juices, and black eyed peas
Stir to combine
Add in chicken stock, making sure to not exceed maximum line, and gently stir to combine
Place lid on and make sure vent is closed
Set pressure cooker on high & cook for 20 minutes
Let naturally release for at least 15 minutes, then manually release
Carefully remove lid and taste and adjust seasoning if needed
If you would like to add in kale you can do now, or let cool and add in when reheated
