It all starts with a buttery and delicious graham cracker crust, baked to perfection.  Next bring on a rich and creamy cheesecake layer, with just a bit of tang in each bite.  Third is the pumpkin “mousse/pudding” layer.  This light pumpkin layer brings everything together to make this the perfect fall treat.  To finish it everything is topped with fresh whipped cream, like this All Day Whipped Cream and some toasted pecans or walnuts.

It is not just for Fall…

I know, I know pumpkin desserts are typically reserved for Fall but this dessert is something you can make year round.  Instead of adding in the pumpkin you could make it with chocolate pudding or just vanilla pudding.  Maybe even add in some fresh berries for a fun summer treat.

Whether you use homemade whipped cream or store bought it is still so, so good.  There is just something so great about whipped cream on a dessert.  I still lick the bowl after I whip up some fresh whipped cream.  It is so simple but just so, so good and makes anything feel just a little more special.

My mom would always fresh whipped cream for dinner parties and now I do the same.  Do you?

Pumpkin Layer Dream

A light pumpkin cheesecake dessert that is a perfect addition to your more traditional Holiday desserts

3 cups graham cracker crumbs
1 cup butter, melted
8 oz cream cheese, room temperature
1/4 cup sugar
1/4 cup half & half
1 tsp vanilla
1 cup whipped cream
1 large package instant vanilla pudding mix
3 cups whole milk
1 cup pumpkin puree
2 tsp pumpkin pie spice
1 cup whipped cream
2 cups whipped cream


Preheat oven to 350
Spray a 9x13 glass baking dish with nonstick spray, set aside
In a small bowl stir together graham cracker crumbs and melted butter until well combined
Press graham cracker mixture into prepared pan, pressing it down as needed to create a smooth layer
Place into oven & bake for 20 minutes, or until browned and set
Remove and let cool
In the bowl of a stand mixer (or a large bowl) whip cream cheese & sugar until smooth
Add in half & half and vanilla until well combined
Fold in whipped cream until well combined
Spoon on top of graham cracker crust and gently spread into an even layer
In a large bowl whisk together pudding mix and milk until it thickens
Stir in pumpkin puree & pumpkin pie spice until well combined
Fold in 1 cup whipped cream until well incorporated
Spoon over cream cheese mixture and gently spread into an even layer
Spread remaining whipped cream over pumpkin layer and sprinkle with chopped pecans (if using)
Place into refrigerator to chill for at least 2 hours before serving
