Skillet Lemon Chicken

I don’t know about you but during the heat of summer i just don’t want to spend a ton of time in the kitchen, but I still want to put delicious dinners on the table … well I have the perfect recipe for this summer, Skillet Lemon Chicken.

All in one skillet

Yes you read that right….the chicken and sauce are all made in one skillet, start to finish.  The beauty of one skillet is that the flavors are going to build on one another without a lot of extra ingredients and there is one one pan to clean up at the end.  

I am a big, big fan of only one pan to clean up…that gives me more time to spend with my family and friends.

Light but still rich

Even though this chicken is cooked in a cream sauce it is still light.  The lemon really brightens up the sauce making it perfect for a quick summer dinner.  

If you wanted you could add in some capers, mushrooms or veggies to make it even better.

And…it is pretty

Not only is this dish easy and perfect for summer but it is also perfect for entertaining.  Once plated it looks like something that took hours to prepare but in reality you were done in less than 45 minutes.  

Serve it with pasta, veggies, or your favorite potatoes…the possibilities are endless.

A quick, easy and one skillet Lemon Chicken that is for sure going to become a favorite.

Ingredients

4 boneless, skinless chicken breasts (or thighs)
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon garlic powder
2-3 tablespoons extra virgin olive oil
1 onion, chopped
3 garlic cloves, minced
1 cup chicken stock
1 lemon juiced, zested
2 tablespoons butter
1/2 cup heavy cream, or half & half
Chopped parsley for garnishing

Directions

Preheat oven to 350
Pound chicken to about 1/2 inch thick
Season both sides with salt, pepper and garlic powder
In an oven proof skillet heat olive oil over medium heat
Add in chicken and brown on both sides, about 3-4 minutes per side
Remove chicken to platter
Add onion to skillet and cook until just softened
Stir in garlic and cook for another 1-2 minutes
Add in chicken stock and lemon juice, scraping the bottom of the pan as needed
Bring sauce to a boil and let cook until it reduces by half
Once reduced whisk in butter and cream
Place chicken back into skillet
Place skillet in oven and let cook for 10-15 minutes or until chicken is cooked through
Remove and serve with chopped parsley
ENJOY!

Notes

*If using thighs, cooking time in oven may need to be reduced
