KETO MEATLOAF – you NEED this in your life

KETO Meatloaf is the epitome of comfort food in my book.  This dish takes me back to my childhood but with an update making it KETO and kid friendly.

Mini in size…BIG in flavor

I made this meatloaf in muffin pans not only because it makes it super easy but also because they are just so darn cute!!  Each little meatloaf is a little bigger than a meatball making them a fun size.  You can have a few for dinner and then a few for lunch the next day.

I also love the size for kids.  My niece and nephew loved them!

OHHHH the glaze!

My favorite part of a good meatloaf is the glaze, so I wanted to make sure that this glaze was amazing.  Keeping in mind this is KETO I went with a little ketchup but added in a ton of seasoning to make this a glaze to remember. 

If you wanted to change up the glaze to make it a little spicier, or sweeter, or more like a BBQ sauce go for it…just adjust the carbs as needed.

Don’t forget the sides

Staying with the idea of comfort foods I served this KETO Meatloaf with my favorite Cauliflower Mash.  They are super easy to make and they are SOOOOO good and the perfect substitute for a traditional mashed potato.

You could also serve it with roasted veggies, zucchini noodles or this Broccoli & Cauli Casserole.  The possibilities are endless.

KETO Meatloaf is the perfect KETO comfort food. Each mini meatloaf is loaded with tons of flavor and no one would ever know there is only 2 net Carbs per meatloaf.

Ingredients

Meatloaf
1 lb ground beef (I used 80/20)
1 cup crushed pork rinds
1 teaspoon all purpose seasoning
1 teaspoon salt
1 teaspoon pepper
1 teaspoon Worcestershire sauce
1 egg
Glaze
4 tablespoons Low Sugar Ketchup (I use this Trader Joes Organic Ketchup )
1 teaspoon Worcesterhire sauce
1 teaspoon apple cider vinegar
2 teaspoons all purpose seasoning (I used a course steak seasoning)
1 teaspoon garlic powder

Directions

Preheat oven o 350
Spray a muffin tin with nonstick spray, set aside
In a large bowl combine all meatloaf ingredients until just combined, you do not want to over work the meat as it can become tough
Divide meat into 8 equal ball and place into muffin tin
in a small bowl whisk together glaze ingredients
Brush glaze evenly over meatloaf
Bake for 15-20 minutes, or until meatloaf is cooked through (or to your desired doneness)
Remove and let sit for 5 minutes before serving
