Instant Pot KETO Chili
I am still in disbelief that Thanksgiving is already over and it is time to jump into full Christmas mode, I feel like it was just yesterday that I was thinking about my summer plans. As busy as the Holiday season can be you still have to cook dinner for all your peeps and this Instant Pot KETO Chili is the perfect dinner that everyone is sure to LOVE!
Quick and Easy
I love the Instant Pot for so many reasons, but one of my favorite reasons is because everything goes into the pot all together. Not only does this add to the overall flavor but you only have 1 pot to clean up when it is all said and done. JUST ONE POT… I love meals like this.
Even better I served out of the Instant Pot itself so I didn’t even have a serving bowl to clean up… it was a win win for sure.
A family tradition
Each Halloween we always have chili. We eat it right after we take the kids trick or treating. This year was going to be super fun. My brother and sis-in-love were dressing up with the kids and it was going to be a big family party… I mean look how cute they are. I got the chili fixed and all packed up in the car and then we got a call we never expected, my dad had a stroke and I had to get to the hospital ASAP.
Needless to say we did not enjoy the chili that night but I did make more and we had it a few nights later. My dad is doing better and has assured us that he is planning on being there next year to enjoy our traditional Halloween Chili dinner.
Options are good
We are a traditional beef chili family but if you wanted to use ground turkey, or even chicken, you could. I also broke up the beef a lot to make it more fine, but you could leave it chunkier as well.
You could also add in more veggies if you wanted (just check the carb counts if doing KETO/Low Carb) or add in cayenne for an extra spicy chili. You could also add in beans, if not doing low carb, but being from Texas I never put beans in my chili.
Really the possibilities are endless!

Great Recipe! I did make a couple of tweaks. I used a leftover Ribeye from a BBQ the night before and added 1/2 lbs of bulk Chorizo in place of Hamburger. I also added 2Tbs of diced chipotle peppers for a bit more heat. Boys say it’s the best Chili the ever had! Thanks for the recipe.
