Gluten Free Lemon Bars

Man, it is getting HOT outside.  The heat index here today is well over 100 degrees…gotta love SE Texas.  Summer here means pools, baseball and anything refreshing.  Gluten Free Lemon Bars are not only refreshing they are a treat all your friends and family can enjoy.

SO simple…and SO good

I am a big fan of lemon bars.  They are not only delicious but they are also so easy to make.  With just a few ingredients you can create the perfect Gluten Free Lemon Bar.  

The crust is similar to a shortbread and the filling is bursting with tons of lemon from the juice and the zest.  Trust me they are AMAZING!

The Crust

Sometimes gluten free baking can be a little difficult.  The cakes are sometimes not as moist, or the cookies not as chewy but for this crust the gluten free flour is perfect.  The crust for these bars is like a shortbread so a little crumbly is a good thing.

Just as a traditional shortbread the crust is not too sweet which is the perfect balance to the sweet and tangy filling.  Even better this crust can be used with almost any bar you would like to make.  You could top it with a blueberry or blackberry or your favorite GF pecan filling.  The possibilities are just so many.

Lemon and more Lemon

For these lemon bars I used both fresh squeezed juice and the zest.  It adds a ton of lemon goodness.  Each bite is bursting with tons of lemony goodness.

Even more than all the lemon yumminess the color is amazing!  Just look at how bright and sunny these bars are.  They really are the perfect summer treat.

Gluten Free Lemon Bars

A sweet & tangy Gluten Free Lemon Bar that everyone is sure to love

Ingredients

FOR THE CRUST
1/2 cup sugar
1/2 cup butter
2 tablespoons water
FOR THE FILLING
1 1/2 cups sugar
1/2 cup lemon juice (2-3 lemons)
3 tablespoons lemon zest (about 2 lemons)
4 eggs, lightly beaten
1 teaspoon Vanilla Bean Paste (or vanilla extract)
OPTIONAL
Powered sugar

Directions

Preheat oven to 350
Line a 9x9 baking dish with parchment paper, set aside
In the bowl of a stand mixer cream together sugar and butter until butter is pea size
Add in flour and water
Mix until just combined, being careful to not over mix
Press crust into prepared pan
Bake for for 25-28 minutes or until just started to brown
While the crust is baking make the filling
In a mixing bowl whisk together all the filling ingredients until well combined
When crust is baked pour filling over hot crust
Place back into oven and bake for an additional 22-25 minutes, or until the middle is just set
Let cool for a few hours before cutting and then store in the refrigerator in an airtight container
To serve sprinkle with powdered sugar, if using
