Instant Pot Creamy Chicken, Broccoli & Rice

What is your favorite casserole?  Are you a Enchilada Casserole fan?  Maybe a Chicken Poppyseed Casserole fan? Or the classic Chicken n Rice?  

Whatever your favorite is, I think I may have a new one for you, and it is all made in the Instant Pot making it super easy!!

Broccoli Love

I love the traditional Broccoli, Chicken and Rice casserole but for this recipe I wanted to add a little extra something.  I decided to roast the broccoli.  I am a big, big fan of broccoli, but especially roasted broccoli.  I love the little charred ends.  They just add so much flavor.  

If you do not want to take the time to roast the broccoli before hand, you don’t have to.  You can throw in raw, or frozen, broccoli and it will be delicious.

The beauty of the IP

There are so many things I love about the Instant Pot, but one of my most favorite features is the fact you can sauté and then cook all in the same pot.  Not only does it make it super easy but it also adds in so much flavor.  

I do this in my dutch oven but being able to do it in the IP makes life so easy (& yummy).  It also helps intensify the flavors, making each dish better then you have had before.

Perfect for dinner tonight

Instant Pot Creamy Chicken, Broccoli & Rice

A new Instant Pot favorite. Each bite is loaded with chicken, bits of broccoli and rice making this my new go to weeknight dinner.

Ingredients

1 tablespoon extra virgin olive oil
1 small onion, diced
2 garlic cloves, minced
1 lb boneless, skinless chicken breast, cut into bite size pieces
1 teaspoon salt
1 teaspoon pepper
1 cup brown rice (or white rice, just check cooking time below)
1 1/2 cups chicken stock
1-2 heads broccoli heads, cut into bite size pieces
1 cup shredded cheese
1/2 cup sour cream

Directions

Add olive oil into bowl of instant pot
Start Instant pot on saute
Add in onion and cook for 1-2 minutes or until it just begins to soften
Stir in garlic and chicken, cooking for an additional 2-3 minutes, stirring a few times
Stir in salt, pepper, rice and chicken stock until well combined
Add in broccoli
Seal lid and change setting to pressure cook on high for 24 minutes (if using white rice you only need 15 minutes)
Let release for 3-4 minutes naturally and then quick release
Stir to combine and make sure rice is cooked, if not cook for an additional 10 minutes on high
Stir in cheese and sour cream until just combined
Serve & ENJOY!

Notes

Adjust cooking time for white rice to only 15 minutes

Craving this right now

I made this a few weeks ago, and everyone loved it.  Now that I am writing about it I am craving it all over again…I think this may be on the menu for tonight.  It is hearty, cheesy, creamy and a perfect option for a quick dinner tonight that everyone is sure to love.
