no flour needed in these brownies

I have several friends who are gluten free and I am always on the look out for a great gluten free recipe.  These brownies are not only gluten free but no on will ever know they are because they are SOOOOO GOOOD!!!

The fudgier the better

I am a HUGE fan of brownies.  I love almost all brownies (like these Oreo Caramel Brownies, or these Espresso Brownies), and these GF Brownies are no exception.

The key (in my opinion) to any good brownie is that they are fudgy.  You know what I’m talking about, when you bite into it is almost gooey and super rich.  Not only are these brownies super fudgy but they are gluten free, making them a perfect brownie for almost EVERYONE!

A little crusty top makes me smile

Growing up my mom only made brownies from the box, and I loved them.  They were fudgy, but they also always had this crunchy crust on top and that was always one of my favorite parts.  Now don’t get me wrong some homemade versions have this crust as well, but I have to say these Gluten Free Brownies have the best one.

Just look at how pretty they are.  They are the perfect thickness and have a crunchy crust….it can’t get better.  Oh yeah, one more thing…they are gluten free.

Rich and very fudgy brownies that are naturally gluten free making them a great option for all your friends and family

Ingredients

1/3 cup cornstarch
1/4 cup unsweetened cocoa powder
1-2 teaspoons espresso powder (optional)
1 teaspoon salt
6 tablespoons butter
12 oz bittersweet chocolate, chopped into chunks
1/4 cup sugar
1/4 cup, packed brown sugar
2 teaspoons vanilla extract
3 large eggs
2 teaspoons sea salt

Directions

Preheat oven to 350
Line a 9x9 pan with parchment paper, leaving some overhang
In a small bowl whisk together cornstarch, cocoa power, espresso powder & salt, set aside
In a saucepan melt butter and chocolate over low heat
Stir in sugars, stirring until well combined
Remove pan from heat and stir in vanilla
In a small bowl whisk eggs together
Slowly add to chocolate mixture, mixing until well combined
Add in cornstarch mixture, stirring until just combined, making sure to not over mix
Pour batter into prepared pan
Sprinkle half of the sea salt over the top
Bake for 30-35 minutes, or until toothpick comes out clean
Sprinkle with remaining sea salt
Let stand for 20-30 minutes before cutting into squares
Serve & ENJOY!!

I hear you…why espresso powder?

First off… No they are not going to taste like coffee.  The espresso powder actually helps to intensify the chocolate flavor.  It gives these brownies a deep, rich flavor without any added gluten…now that is a win, win.

If you don’t have any, or don’t want to use it, that is all good.  The brownies will still be delicious, but I do urge you to try it, you may be surprised.

Gluten Free has never been so good, go ahead and make them, I know you want to.
