bacon green bean casserole-yes I said bacon

Over the years I have come to the conclusion that you are either a fan of green bean casserole or you are not…it’s really that simple.  I have always landed on the not a fan side of this debate but my brother, James, is a HUGE green bean casserole fan and asks for it every holiday…but this year it was time to take it to the next level.

Most of the time my sis-in-laws mom will make it for him, but for Easter I decided to take on his request but to make it in a way that I (and the other non-lovers) would love as well.

To make the casserole super yummy, and something I would like, I used fresh green beans, homemade cream of chicken soup (recipe can be found here) and BACON.  

Yes you read that right, I added bacon to this otherwise traditional green bean casserole.  The bacon added a great hint of smokiness and bacon-y goodness that just makes it so, so good. Then of course I topped it with those delicious french fried onions which made this casserole perfect.

Green Bean & Bacon Casserole

A great update on the traditional green bean casserole with fresh green beans & bacon....doesn't get much better than this

Ingredients

2 lbs fresh green beans, trimmed
1/2 lb bacon, cut into 1 inch pieces
3 garlic cloves, minced
2 1/2 cups low fat cream of chicken soup (homemade or canned)
2 cups French Fried Onions

Directions

Preheat oven to 375
Spray a large casserole dish with nonstick spray, set aside
In a large pot, with high sides, begin to cook bacon over medium high heat
Cook until browned but not crispy, add in garlic and cook for an additional 2-3 minutes, stirring often
Add in cream of chicken soup and green beans, stirring to coat green beans
Pour mixture into casserole dish
Cover dish with foil and cook for 30 minutes
Remove foil & sprinkle french fried onions over the top of the casserole
Return to oven & continue cooking for an additional 15-20 minutes or until green beans are tender and onions have browned
Remove and let stand for 5-10 minutes before serving

**You can make this the day before and store in the refrigerator until ready to bake, just add an additional 10-15 minutes to baking time

There are options

If you wanted to use canned green beans that would work as well, and you could also use canned cream of chicken or cream of mushroom soup…but trust me if you try the homemade version you will never use canned again.  

Never make the same ‘ole green bean casserole again…this amped up version is the BEST ever and will be a perfect addition to all your Holiday tables or family dinners!
