Naked Buffalo Tenders (Keto/Low Carb)

I don’t know about you but the Super Bowl is a big deal in my family.  We usually have some sort of get together with friends and family.  When it is party time that means is time for food and lot of it!!

It’s not just about the Game

Now for the women we primarily watch the game for the commercials and for the half time show, but I know the guys watch the game for the actual game.  

I mean who can forget the Janet Jackson show or the Beyonce show…the list goes on and on.  Of course there are also some great football memories as well, but I will leave those for the men to bring up.  Either way everyone is usually happy and very full by the time the last whistle blows.

Wings are a must

At most of our Super Bowl parties there are some sort of wings being served.  My brother has grilled them before, but mostly we order out and pick them up just before the party. The problem is they are usually fried, full of fat and sometimes the flavor can just be too much.  

Well don’t you worry there is no reason to ever order again.  These skinless tenders are everything you love about buffalo wings but without the guilt most of them bring.  

Skinny but still so good

The beauty of these tenders is everything is done all in one pan, making them a quick fix and an easy clean-up.  The seasoning is a little smoky, a little salty and even a little sweet making it the perfect compliment to the buffalo sauce.  

Now I took the easy way out and used the jarred buffalo sauce, I love it, but make your own if you want.  The tenders I make are pretty mild, but if you want them spicier then feel free add more buffalo sauce.  Add it little by little though, so it doesn’t get too hot.

No frying here

Chicken tenders seasoned to perfection and then tossed in buffalo sauce giving them tons of flavor without any guilt, also making them perfect for a weekend get together or a quick weeknight dinner

Ingredients

2 lbs boneless, skinless chicken tenders
1 tablespoon olive oil (or avocado oil)
1 tablespoon butter
1 tbsp all-purpose seasoning (your favorite brand will work, I used Lowry's)
1 tsp pepper
1 tsp chili powder
1/4 cup Franks Red Hot Buffalo sauce (or your favorite buffalo sauce), divided
2 tablespoons butter

Directions

Preheat olive oil in a large skillet over medium-high heat
Pat dry chicken tenders with a parer towel
In a small bowl combine all-purpose seasoning, pepper & chili powder
Sprinkle seasoning over chicken tenders, on both sides patting seasoning into chicken
Heat olive oil and butter in medium skillet over medium high heat
Place tenders into hot pan and cook on each side for 3-4 minutes, or until browned
In a small saucepan bring buffalo sauce and butter to a simmer
Drizzle 1/2 of the buffalo sauce over chicken and continue cooking for another 5 minutes, flipping twice
Remove to a platter
Serve with blue cheese dip, ranch dip or on their own

I really love buffalo anything, there is just something so great about the flavor with no added fat and calories.  Really making it perfect for a skinny chicken dish! 

I served my tenders with a little additional drizzle of buffalo sauce, some crumbled blue cheese, celery and my homemade Blue Cheese Sauce.
