chocolate cookies for the chocolate lovers…

choc thumbprint cookies-hThere is just something so sweet about a thumbprint cookie.  Growing up my mom would buy the shortbread ones with the cutest little chocolate center, and then sometimes she would make a peanut butter cookie with a chocolate kiss in the center so for this Valentines Day I wanted to make a chocolate cookie version.

I am all about chocolate anything and this chocolate cookie with a chocolate kiss in the center is a perfect chocolate treat and an even more perfect treat for Valentines Day.

To make these cookies decadent I used dark cocoa powder for added richness, buttermilk for a little tang and tartness (which I love in a cookie), and then assorted sprinkles to celebrate Valentines Day in a fun way.   I used regular milk chocolate kisses but you could use any variety of kisses you prefer, or any variety of sprinkles you like making them perfect for your family.

Chocolate Thumbprint Cookies

Ingredients

1 cup flour
1/3 cup cocoa powder
1/4 tsp salt
8 tbsp butter
1/3 cup sugar
1/3 cup brown sugar
1 egg yolk
2 tbsp low fat buttermilk
2 tsp vanilla
3/4 cup sprinkles
26 hershey kisses

Directions

Prepare the dough:
In a bowl whisk together flour, cocoa powder & salt
In the bowl of a stand mixer whip together butter and sugars until light & fluffy, about 5 minutes
Add in egg yolk, buttermilk & vanilla mixing until well combined
With the mixer on low add in flour mixture until just combined, scraping down the sides as necessary
Remove dough from mixer and wrap in plastic wrap & form into a disk
Place dough in the freezer for 30 minutes, or in the refrigerator for 1-2 hours
To bake the cookies:
Preheat oven to 350
Line a cookie sheet with parchment paper
Roll dough into 1 inch balls
Roll each ball into the sprinkles of your choice, I used a variety for some added fun
Using your thumb place a small indention into the center of the cookie
Place cookies onto prepared baking sheet
Bake for 10 minutes, or until cookies are just set
Remove from oven and immediately place a kiss into the center of the cookie
Let cool on backing sheet for 5 minutes and then remove to a wire rack to cool completely

Happy Birthday Mammaw

 A quick funny…my Mammaw’s birthday is on Valentines Day and when I took these cookies to her a few days ago she got so excited and thought I made them all for her…of course I obliged and told her they were an early birthday cookie and before I knew it all 12 cookies were GONE.  Literally in a matter of 30 minutes she had eaten all of her cookies and then decided she was too full to go to dinner…well I probably would have been to full to eat dinner as well.  Needless to say Mammaw loved them and thought they were a perfect early birthday treat.

Whether you are making these chocolate thumbprints for Valentines or just for a fun weekend treat (the kids would love to roll the dough in the sprinkles or push the kiss into the center of the cookie) they are sure to be delicious.
