one pan & done alfredo

one pan alfredo-closeWho doesn’t love a one pan meal…I mean c’mon it comes together with just a few steps and clean-up is super fast making this a perfect dinner option for a busy day.

Over the years I made my fair share of one pan meals like this one pan spaghetti and this one pot sausage & potato stew but one of my most favorites it this cheesy one pot alfredo pasta.   Alfredo sauce is my favorite sauce to put over noodles and when I can make everything in one pot it makes it even better.

Now as we all know this cheesy and decadent sauce can be a little higher in calories and points than maybe you want, so I wanted to try and lighten this dish up a bit without losing any of the richness or creaminess & of course the cheesiness.  To start with I used fat free half & half instead of heavy cream or the full fat version of half & half.  I use the fat free version in almost all my cream recipes as it still adds in a lot of creaminess but without a lot of extra fat.  I also added in some reduced fat cream cheese to add in a lot of extra creaminess but again without as much fat and calories of the regular version.  Then of course I added in some parmesan cheese, it is an alfredo sauce so in my book that mean parmesan cheese.

This pasta is great on its own but to make it a complete meal serve it with your favorite grilled chicken, fish or shrimp and then serve your favorite salad or roasted veggie to make it even better.  

I know that this dish is still a little decadent and not something to indulge in all the time, but every once in a while it makes a nice treat that everyone is sure to enjoy…and don’t forget it is all made in one pan making it super easy!  I love dishes like that!
