healthy + chips = new favorite

zucchini chips-hThe word healthy was a yucky word to me for many years.  Healthy meant veggies, no flavor and boring.  Did you ever think that?  Has the word healthy been hard to swallow before?  Well don’t worry…it is soon to become one of your favorite words because now healthy can be chips too!

One of the first veggies I first fell in love with was zucchini.  It started with the fried appetizer version at a great local dive where my grandparents lived when I was a kid, and eventually it moved to a baked version.  When I say eventually I mean EVENTUALLY…it took like 20 years, but I did eventually get there.  And since I learned just how great this fun veggie could be I have made several great recipes, such as this great stuffed version or these grilled veggies, but these chips are a new favorite for sure.

As much as I am trying to embrace this healthier lifestyle finding something to snack on has been difficult at time.  Sometimes I am just craving a little salty and cheesy treat but traditional chips are obviously not the best choice…so it was time to find something that will satisfy my craving without all the guilt of chips.  Now I am not going to lie these are not super crispy like chips but they are loaded with a ton of flavor from a  few simple ingredients.  I love recipes like this…they come together quick, you probably have everything you need and it is yummy!!

Parmesan Zucchini Chips

Crispy thin slices of zucchini with a perfect hint of parmesan in each bite making this a great low fat, low calorie & low point snack (or side dish)

Ingredients

1 lb zucchini, sliced thinly on a mandolin or with a very sharp knife
olive oil spray
1 tsp salt
2 tbsp grated parmesan

Directions

Preheat oven to 425
Line a rimmed baking sheet with parchment paper
Spread zucchini slices into a single layer on the parchment paper
Lightly spray zucchini with olive oil spray
Sprinkle salt over zucchini
Place into oven and bake for 10 minutes
Flip and sprinkle with parmesan cheese
Continue baking for an additional 10 minutes or until cheese is browned
Remove and let cool on pan for 5 minutes
Serve & ENJOY!!

If you don’t have parmesan, or don’t like it (I’m not sure who that could be, but there might be a few out there) you could use salt, pepper, some herbs (dried or fresh), and other seasonings such as chili powder or cumin.  That’s the beauty of recipe like this…you can make them perfect for you and your family.
