• Espresso Chocolate Chunk Blondies

Are you a fan of a good blondie?  Well I am and I especially love them when there is something a little different about them, like some espresso and chocolate.  Trust me these are the perfect little pick me up you need for this week. Not your basic blondie Are you a basic blondie fan or an amped up blondie fan?  Well, for me I am all about the amped up version.  This time around I decided to add in two of my favorites…espresso and chocolate.  Yes, espresso and chocolate. Now I know that not everyone is a fan of coffee anything, or coffee flavored items, but for those that…

  • One Pan Sausage & Veggies

YES you read that right this is a one pan dinner…yes ONE pan.  Even better it is loaded with veggies and yummy turkey smoked sausage making this dish not only easy but also delicious and not so bad for you too. Season, Season, Season To make this dish really stand out it is all about the seasoning.  To keep it simple though I chose a seasoning mix that brought a ton of flavor but you probably already have everything you need in the pantry.   I mixed together salt, pepper, garlic powder, chili powder and dried parsley.   If you wanted to use your favorite all purpose seasoning you could…

  • Balsamic Brussels Sprouts

As you all know I am a BIG, BIG fan of Brussels Sprouts.  I love them roasted, with a hint of lemon, love them crispy, I even love them raw and in salads.  This version though is a new FAVORITE and I have already made them 2 times since I first made them….they are that good. A little tangy surprise I am all about a little tang.  I love how it awakens my taste buds and gets me excited for the next bite.  One of my favorite ways to bring a little tang into a dish is with balsamic vinegar…it is just so good. I use a balsamic reduction (much like…

  • Creamy Garlic Chicken & Potato Bake

Happy Garlic Day!  To celebrate I waned to share one of our new favorites…Creamy Garlic Chicken & Potato Bake.  It is loaded with tons of flavor and comes together pretty quick too. It just makes me happy… I love a dinner that can all be prepared in a couple of pans and it is loaded with a ton of flavor.  This dish is all that and more.  It has super juicy chicken, tender potatoes and a little spinach (you know so it is healthy) and a rich garlic cream sauce making it SOOOOO good. It really does have everything you need for a hearty dinner all in one pan. The…

  • Lemon Tart Cookies

With the weather warming up I am ALL about lemon anything.  I love lemon in my drinks, lemon in my food and lemon in my dessert…lemon anything!! They are just so cute! There is just something about cute little desserts.  It is even better when they are little lemon desserts.   I have always been a fan of making desserts or muffins in my mini muffin pans, but these are definately one of my favorites so far.   The cookie crust adds a bit of sweetness to the tartness of the lemon making each bite just perfect! They are just so pretty! Not only are they cute, but they are…

  • Chicken Enchilada Casserole

Is there anything better than a casserole on a busy weeknight?  In my world I am all about a super easy casserole any time, but especially on those busy nights.  Even better when it is an enchilada casserole! All in one… One of the best things about a casserole is the fact that everything is all packed into on dish.  There are typically fewer pans to clean up, it serves a lot of people and there is something just so comforting about a casserole.  This enchilada version is all that and more. There is chicken, beans, rice, cheese and a little heat in each bite, just like your favorite enchiladas.…

  • MeeMaw’s Chicken n Dumplings

These last few weeks have been pretty trying.  When I am under stress I tend to eat comfort food and one of my favorites is my MeeMaw’s Chicken n Dumplings.   Thankfully things seem to be calming down a bit and getting back to “normal” but I am still craving my favorite dish. Super simple Growing up I was not a fan of veggies.  I would sometimes eat a green bean here and there but not much else.  My MeeMaw being the best EVER never made us eat veggies.  When we were at the farm she would make us anything we wanted and this was always my must have.  …

  • Roasted Veggie Couscous

Spring veggies are just about ready in my part of the country. The farmers markets are starting to get loaded up with beautiful produce and this couscous dish is one of my favorite ways to highlight so many of those veggies. It starts with the veggies With so many beautiful veggies popping at my farmers markets and in my grocery store it was hard to choose which veggies to use for this delicious salad.  First I knew I wanted to use peppers, red, yellow and orange.  I love how sweet early spring peppers are and these were just perfect.  Next I threw in an onion.  I used a white onion,…

  • Strawberry Cobbler

I found myself in quite the situation yesterday…there were a ton of strawberries in my refrigerator that I had to use..  I had planned on making a strawberry dessert for Easter, but due to some family stuff I didn’t get too.  Now I had to figure out something yummy to make with them. Cobbler is was! Was craving cobbler… As the weather gets warmer, I do live in southeast Texas so we are warming up down here, all I want are fruit desserts and cobbler is always at the top of the list.  Growing up peach cobbler or blackberry cobbler were my favorites but once when I was in college…

  • Balsamic Chicken Tenders

Chicken tenders are one of my most favorite proteins to cook.  They are quick, easy and you can do just about anything with them, making them a perfect weeknight dinner option. Amping them up a bit I am a fan of a simple grilled chicken tender, or breast or thigh, but when you can marinade and glaze with something a little special I am an even bigger fan.  The added flavor from the balsamic reduction adds just enough of that something extra to make these chicken tenders something to remember. They balsamic vinegar brings a bit of tang while the brown sugar gives a bit fo sweet in each bite.…
