• Balsamic Chicken Tenders

Chicken tenders are one of my most favorite proteins to cook.  They are quick, easy and you can do just about anything with them, making them a perfect weeknight dinner option. Amping them up a bit I am a fan of a simple grilled chicken tender, or breast or thigh, but when you can marinade and glaze with something a little special I am an even bigger fan.  The added flavor from the balsamic reduction adds just enough of that something extra to make these chicken tenders something to remember. They balsamic vinegar brings a bit of tang while the brown sugar gives a bit fo sweet in each bite.…

Easter is just around the corner and in my family we always have a BIG family lunch to celebrate.  When it comes to big family dinners the menu cam sometimes become a little overwhelming, but do not fear I am here to help.  Below you will find a little something for everyone…including my favorite DESSERT! Fluff, first First let’s start with one of my brother’s favorite, Pistachio Fluff.  Now I am not going to lie I was not a fan of this “salad” when I was growing up but I have learned to appreciate it as an adult.  It is a staple on all of our Holiday tables and rarely…

What is your favorite casserole?  Are you a Enchilada Casserole fan?  Maybe a Chicken Poppyseed Casserole fan? Or the classic Chicken n Rice?   Whatever your favorite is, I think I may have a new one for you, and it is all made in the Instant Pot making it super easy!! Broccoli Love I love the traditional Broccoli, Chicken and Rice casserole but for this recipe I wanted to add a little extra something.  I decided to roast the broccoli.  I am a big, big fan of broccoli, but especially roasted broccoli.  I love the little charred ends.  They just add so much flavor.   If you do not want…

Spring is finally here…well at least according to the calendar.  I don’t know about you but I am ready for some warmer weather and the sun to come out for more than 1 day at a time.   To celebrate Spring I decided to make some super fun cookies with the adorable Spring M&M’s.   Just the colors of the M&M’s make me happy. • Reuben Grilled Cheese

Are you a fan of grilled cheese.  I love them… they can be simple, with meat, with multiple types of cheese, thick bread, thin bread, fancy bread…I just love grilled cheese. Closed or Open? There is a great delicatessen here is Houston call Kenny & Ziggy’s.  This is the first place I ever experienced The Rueban.  I am almost embraced to admit this but it was only about 8 years ago that I fell in love with this amazing sandwich.   It all started with a  shopping trip to the Galleria with my brother for my sis-in-love.  Afterwards we went to Kenny & Ziggy’s for lunch and he said we…

  • Instant Pot Corned Beef & Cabbage

St. Patricks Day is just a round the corner and according to my dad that means it is time for Corned Beef and Cabbage.  Normally I will find a local place who is fixing it and get it for him, but this year I decided to get it a try in the Instant Pot.  PS….I LOVED IT! Everything in one pot The beauty of the instant pot is that you literally can cook everything in one pot.  That means one pot to clean up when everything is all said and done…I so LOVE that!!  OK, well maybe one pot and a cutting board but still minimal cleaning up. Another great…

  • THE Instant Pot Mac-n-Cheese

I love mac-n-cheese anytime, anyway, anywhere.  I have made my fair share over the years but I have to say this is definately one of my favorites yet. Cheesy Goodness In my opinion any good mac n cheese has a couple of cheese varieties in it.  Some favorites are gouda and cheddar, goat and mascarpone and classic cheddar blend.  For this mac-n-chesse I combined my dads version (stovetop velveeta) with mine to create a delicious mac-n-cheese. To make it extra creamy I used a little velveeta, some white cheddar (you could use yellow) and then a mexican blend.  The combo of all the cheeses create a super creamy, cheesy blend…

  • The BEST Chocolate Chip Cookie

I am so in the mood for chocolate chip cookies…I mean like a whole big plate of them with ice cold milk.  Even more I want these cookies…RIGHT NOW! My version of the NYT recipe If you have searched for a chocolate chip cookie recipe on Pinterest lately I am sure you seen the New York Times recipe.  It is the recipe made with cake flour and bread flour and then you have to chill it for 24 hours.  Well, I don’t know about you but chilling cookie dough for 24 hours is not something I am very good at. I have done it before and the cookies were really…

  • Bang Bang Shrimp Pasta

Have you ever had Bang Bang Shrimp?  I LOVE IT!  It is actually more like OBSESSED!   If you have you know why I love it so much, and if you have not well then you need to make this ASAP.   Not your typical version The typical Bang Bang Shrimp is fried and then tossed in this amazing creamy sweet and spicy sauce.  It is crispy and delicious but also pretty heavy, and well fried.  For this pasta I wanted to lighten it up a bit, but still give you everything that makes Bang Bang Shrimp so amazing. Instead of frying the shrimp I decided to pan sear them…
