• Skillet Lemon Chicken

I am so ready for warm weather and I so ready for this Skillet Lemon Chicken. All in one skillet Yes you read that right….the chicken and sauce are all made in one skillet, start to finish.  The beauty of one skillet is that the flavors are going to build on one another without a lot of extra ingredients and there is one one pan to clean up at the end.   I am a big, big fan of only one pan to clean up…that gives me more time to spend with my family and friends. Light but still rich Even though this chicken is cooked in a cream sauce…

  • Roasted Cauliflower Mash

This Roasted Cauliflower Mash has quickly become one of my most favorite sides.  Growing up mashed potatoes were a staple on our table.  My mom loved them and my grandmother loved them so anytime we could have them we would.  Whether they were just the traditional recipe or something a little extra special like these Garlic Mashed Potatoes, it didn’t matter we loved them all and now I love this cauliflower version (trust me I cannot believe I just said that out loud).  Let’s be honest though as we all get older sometimes a lower carb version is the better option… I mean not ALWAYS but sometimes. Roasting is key…

  • Homemade Crispy Cheese Chips

Crispy Cheese Chips are one of my favorite snacks… and they are low carb too! So Crispy There are so many options when it comes to your cheese options but when I went to the store to get the cheese slices I found a party pack of pre-sliced cheese and I grabbed it right up.  It had cheddar, havarti, colby and gouda.  I was so excited to see how each one would work. Much to my delight they all worked amazing!  All turned out super crispy just like my favorite chips. Changing it up a bit To add a little something extra to the chips I added some black pepper…

  • Queso Burger

I am all about a yummy burger and this Queso Burger is everything! It all starts with the queso What makes this burger super special is the combo of your favorite mexican inspired yummies and a traditional burger.  the star for me is the Queso.  Growing up in Texas I have been blessed with amazing Mexican/Tex Mex food my whole life.  One of the staples of tex max is queso, aka cheese dip.  After many attempts I have found one that I love and I can make at home in no time. This queso blanco is so good and perfect on this burger or at your next party! Now let’s…

  • Roasted Rib Roast

My brother blew it out of the park this past Christmas with the Roasted Rib Roast… trust me you need to make this ASAP! It all starts with the seasoning Having a good crust on a prime rib is everything and this recipe gives you a great crust but with just a few ingredients.  To make the rub it is just Montreal Steak Seasoning and some extra pepper and that’s all.  Seriously, it is all we use and just look at that crust! If you do not have Montreal steak seasoning you can use any all purpose seasoning you have, I highly recommend a course seasoning though for a pretty…

  • Grilled Summer Veggies

I am still all in on the summer veggies that are everywhere right now and so to celebrate them I heated up to grill to let them shine. It is still summer  Y’all I know I am so ready for cooler weather (& pumpkin spice everything) but one of the best summer things happening right now are the veggies.  There are some amazing veggies happening at the farmer’s markets and grocery stores. The zucchini is amazing, the squash is just so good, then onions are the perfect sweetness, broccolini, asparagus everywhere & the corn… y’all THE CORN!  PS… more corn recipes coming, I cannot get enough. • Simple Roasted Chicken

Roasted Chicken is truly one of my staples for lunch & dinner.  I mean think about it you can pair it with just about anything & it is done in no time…making it perfect for dinner this week. All about prep… In my opinion prepping the chicken is the most important part.  This is when you can ensure there will be tons of flavor, it will be juicy and get the golden skin.  So how do we do all of this… well, hold on…here we go. First is about the flavor.  I prefer a little lemon, some herbiness (not sure that is a real word) and some delicious seasoning.  So…

  • Instant Pot Pulled Pork Verde

I am obsessed with this Instant Pot Salsa Verde Pulled Pork… truly OBSESSED!!  LIKE REALLY OBSESSED! Pulled Pork Love! I love me some good pulled pork, but when you add in a little heat from some salsa and green chilies it takes it to a whole new level.  This pork is cooked in a delicious mixture of salsa, chilies, stock and spices.  Once it all cooks down it becomes this amazing concentrated spicy sauce that takes this pork to the next level. Broil it a bit… In the idea of a carnita I pulled the pot from the broth and broiled it for just a bit to give it some…

  • Air Fryer Chicken – Your Go-To Chicken

Do you have an Air Fryer yet?  I mean everywhere I look I am seeing new recipes, new tips and tricks & people raving about their air fryer.  I resisted on getting one as I just didn’t want another small appliance taking up space, but then I started seeing everyone rave about the Air Fryer Instant Pot Lid.  And let me tell you, I am so glad I did. Better than store bought… The beauty of making a rotisserie style chicken at home is that you can season it just how you want.  You could use lemon pepper, or cajun, or just salt & pepper.  This time around I used…

  • Cheesy Garlic Chicken

Cheesy Garlic Chicken is your new go to weeknight dinner. I love this recipe even more because it only uses a few ingredients, most of which you probably have on hand…cannot get much easier than that. Cheesy Garlic LOVE This chicken dish is SOOOO good.  The chicken is nice and tender cooked under a delicious layer of a creamy garlic mixture that gives this dish a TON of flavor. The base of the garlic goodness is cream cheese.  I used a whole brick (8 oz) of cream cheese mixed with a little sour cream and minced garlic…lots of garlic.  The fresh garlic is what makes this chicken stand out.  It…
