• A little summer road trip fun

Growing up every summer there was at least 1 road trip in our family.  Sometimes we would travel to Missouri (about 12 hours) or maybe to Florida (too far).  Other times we would keep it close and just go a few hours to Austin or San Antonio. No matter how close or how far, I wish we would have had these questions to help us pass the time. SO fun…. Friends or Family…. Whether you are road tripping with your family or with some friends for a fun girls trip (or guys trip) you need to take these questions along.   Even better if you are doing these with your…

  • Homemade Ice Cream has never been so good (& easy)

Summer is officially here and it is ICE CREAM TIME!!  Honestly it is always ice cream time in my world, but especially in the summer.  I mean just look how refreshing it looks…it is the perfect summertime treat!! Homemade and OH SO EASY! Growing up my dad would always make homemade ice cream for every get together we had in the summer.  Way back then he used one of those old fashioned ice cream makers where you had to sue rock salt and it seemed to take FOREVER (at least to a kid it seemed like forever)!   Now I use a much smaller machine and it is done in…

  • A whole new way to Fajita

I could literally have a fajita, of some sort, for every singe meal.  Yes for breakfast, lunch and dinner and maybe even a snack.  As much as I love fajitas, sometimes I just don’t want to take the time to fix them…well that is until now. Peppers and Onion…OH YEAH! One of my favorite parts of any fajitas are the peppers and onions.  I just love the little charred bits and the hint of sweetness and a little spice in each bite.   Even better they add a ton of flavor to the meat, in this case chicken, which makes them a must have in all my fajita dishes. Careful…

  • One Pot of Cheesy Yummy

I love food…that is no secret.  I love everything from tacos to osso bucco to chili and BBQ (I do live in Texas).  One thing I am always in the mood for though is pasta and if it is cheesy pasta that is even better. Branching out a bit… A few weeks a go I was with my mom and we went to one of our favorite lunch places, Cafe Express.  Normally I get their roasted vegetable tart but that day I really wanted pasta so I went with their pasta alfredo.   I really loved it as it was a little different than my mortal go to alfredo.  It…

  • Easiest Pie EVER

Ok, Ok I now I talked a lot about how much I love all the berries right now yesterday, but I just have to share one more recipe with you.  This one is all about blueberries and they are SOOOO good!! Easiest Pie I have EVER made I love summer.  We are in the pool all the time.  Playing with my niece and nephew.  Enjoying the sun (& humidity).  Eating yummies whenever I want and loving every bite.   The only problem is I don’t want to spend a ton of time int he kitchen and lets be honest traditional pie takes a while…but these Blueberry Pie Bars don’t.  Trust…

  • Triple the Berries…Triple the Yummy

I cannot get over all the beautiful berries that bursting at my local grocery store and farmers market.  It seems everytime I go to the store I cannot help but buy several…they just look that good. What to do with all these berries? As much as I can’t resist the berries I now have to figure out what to do with all of them.  First I made my Berry Smoothie, and then I put some on ice cream.  Next I made my Berry Tart and then I just ate them on their own.  I used a lot of them but there was still some left…so what could I do next?…

  • Quick and easy lunch with some pesto love

Summer is in full swing and that means quick and easy lunches are a must.  Something that is yummy, delicious and perfect for a quick bite in between swimming and a trip to the park…I love summer! Just a few ingredients Chicken salad is a favorite of mine.  I love the traditional version with mayo, mustard and celery.  I also love a fancier version with apple,  cranberries and walnuts… but my favorite chicken salad is this Pesto Chicken Salad.   It is light but still full of flavor.  I use pulled rotisserie chicken.  I love how easy it is but also the flavor.  Even better at my local grocery store…

  • A steakhouse night at home in no time

It is no secret that I love going to a nice steakhouse for a wonderful dinner, but it is even better when you can everything you love at home.  ANYTIME you want!!   Bringing the steak home To cook a nice steak dinner at home I like to go with a nice strip steak or a filet.  I am a no bone steak kinda girl…but my rancher brother (& the other one too) is all about a bone in ribs eye.  It is all up to you, just adjust cooking time as needed for thickness and desired doneness. To be rare or not? How do you like your steak cooked?…

  • A tart to brighten your day

Summer is here and that means it is time for everything lemon.  Yes…you will see lemons in a ton of recipes over the next few months.  I cannot get enough lemon in my life…especially in the summer! A tart … yes a tart Ok now I know these like bars and you can call them that for sure, but they are made in a tart pan so a tart they will be.   Can I just tell you how much I love my tart pan.  It makes the most beautiful desserts (like this berry tart) and it is so easy to clean, which is always a plus.   Check out…
