Grilled Vegetables like never before

We love to grill here in the sparkles n sprouts house.  As I am sure you have seen we grill everything from burgers, to pork to fish….but these grilled veggies are a new favorite.

Grilled Vegetables, Really?

OK, I know what your asking.  Veggies are really a favorite?  YES, these veggies are loaded with so much flavor they are a new favorite for sure.

Not only are they loaded with flavor but they are also not so bad for you either.  It doesn’t get much better than that.

Loaded with flavor, Really?

Yes!  That is the short answer…these veggies are loaded with TONS & TONS of flavor.

So where does it all come from?

First it comes from the veggies themselves.  I used veggies that have tons of flavor, and I knew grilling them would only add flavor.  The Brussel Sprouts, peppers & onions all get a little sweet when you grill them and the little bit of char adds another layer of flavor.  I also added in some olive oil, salt pepper and garlic powder just to help everything come together.

Why grill vegetables?

I don’t know about where you live but it is HOT here. Heat indexes in the 100’s and sunny, sunny, sunny…and I don’t want to heat the house up with the oven.

I also love to heat up the grill because that means The Hubby is in charge, and I can sit back a little.  It’s almost like have the night off, except for the cleaning-up, and serving and making the sauce….like I said almost a night off.

What if I don’t like Brussels Sprouts?

As you know The Hubby has not been a fan of these cute little green bundles, but he has become a fan and these grilled versions definitely helped.  But if they are not an option for you or your family you can use really any combo of veggies you like.

You could use broccoli, summer squash, zucchini, peppers, onions, eggplant or maybe some green beans. Use whatever looks the best in your local produce area or at the farmers market.  The possibilities are endless…ENDLESS!!

Grilled Vegetables

Veggies lightly seasoned and then grilled to perfection making for a delicious summer side.

Ingredients

1-2 tablespoons vegetable oil
1 pound brussels sprouts, stems cut off and sprout halved
1-2 large yellow bell peppers, sliced
2-3 large red bell peppers, sliced
1 large onion, sliced
2 medium zucchini, cut into 1 inch pieces (if using grill pan, if not cut into long strips to keep from falling into grill)
2 medium yellow squash, cut into 1 inch pieces (if using grill pan, if not cut into long strips to keep from falling into grill)
2 tablespoons extra virgin olive oil
1 tablespoon salt
1 tablespoon black pepper
2 teaspoons garlic powder
2 tablespoons fresh chopped parsley

Directions

Preheat grill to medium high heat
If using a grill pan - I highly recommend one - lightly brush with vegetable oil and place on grill as it heats, if not rub grates with oil
On a large sheet pan lay out all the chopped veggies, keeping them separate as they will go on the grill at different times
Drizzle olive oil over veggies
Sprinkle veggies with salt, pepper & garlic powder
Toss veggies gently, keeping them seperated as much as possible
Place brussels sprouts onto grill, letting them cook for 1-2 minutes, turning often as they can burn quickly
Next add peppers and onions onto grill and let cook for 1-2 minutes, turning regularly
Lastly add the zucchini and squash, cooking for 1-2 minutes total
Once zucchini & squash are done all the veggies should be ready to come off, if not continue cooking as needed until veggies are crisp tender
Top with parsley
Serve & ENJOY!!
