Berry Swirl Cheesecake Bars

Cheesecake is always a good idea, but when you swirl it with berry jam… well thats just a whole new level of YUM!

OH the Crust…

One of my favorite parts of cheesecake is the crust.  I am a sucker for a good graham cracker crust.  There is just something so yummy about a buttery graham cracker crust.  

I know you can make it with other crusts but for me I am a graham cracker girl all the way.

Cheesecake Time!

In my opinion a good cheesecake is rich, creamy, a little tart and a little sweet.  

This one is all that and more because I used vanilla bean paste which just adds that little something extra.  I just love the extra hint of vanilla in each bite making this cheesecake something special.

If you don’t have vanilla bean paste, don’t worry you can use vanilla extract & it will be AMAZING!

Jam & Cheesecake come together 

As much as I love a good graham cracker crust and a rich and creamy cheesecake the real star of this dessert is the berry jam swirl.  There is just something so perfect about the jam and cheesecake, they really do make just the perfect combination.  Don’t believe me?  Try it.

I used this Roasted Betty Jam to swirl through the cheesecake, not only making it look amazing but also DELICIOUS!

I love these bars for all your Holiday & Family get togethers… they will be a huge hit I am sure!  I mean they are kinda red, white and blue making them perfect for the 4th of July… right??

If you do not want to make jam, you can use whatever your favorite one is, just heat it up for a bit to make it easier to swirl.

Berry Swirl Cheesecake Bars

The perfect summer cheesecake. Each bite is bursting with berry goodness and rich cheesecake.

Ingredients

Crust
2 1/2 cups crushed Graham Crackers
1/2 cup butter, melted
1/4 cup sugar
Cheesecake
24 oz cream cheese, softened
3/4 cup sugar
3/4 cup brown sugar
2 teaspoons Vanilla Bean Paste (or vanilla extract)
1/4 cup sour cream
3 eggs
3/4-1 cup Roasted Berry Jam (or your favorite variety)

Directions

Preheat oven to 325
Spray a 9x12 glass dish with nonstick spray or line with parchment paper
In a medium bowl mix together graham crackers, butter and sugar until well combined
Press into prepared pan and bake for 10 minutes
Remove and let cool
While crust is cooling in a stand mixer, or large bowl, beat together cream cheese, sugars, vanilla bean paste, sour cream and eggs until well combined, scraping down sides and needed
Pour cheesecake over crust
Using a spoon place dollops of jam over cheesecake
Using a knife, or skewer, gently swirl
Bake for 1 hour, or until center is just set
Remove and let cool completely and then chill for at least 4 hours, overnight is best
Serve & ENJOY!

Notes

I prefer a multi-berry jam but use anyone you prefer
