Cadbury Chocolate Chip Cookies

Easter is TOMORROW & Cadbury Chocolate Chips Cookies are the perfect treat.  I don’t know about y’all but the great “Quarantine of 2020” has really thrown off my calendar and time frames in general.  I just realized I never posted these amazing cookies for your Easter (at home) Celebrations.  Good thing is they are super quick to make!!

Cadbury Egg Fun!

Since I was a little kid I have always loved the Cadbury Eggs.  I just love the crunchy shell with the chocolate inside.  I also love the pastel colors!  I have used them as a centerpiece on my table, as a fun snack or in cookies like these or on top of a fun thumbprint cookie.

I know what you are might be thinking… who knew there were so many options?  Maybe you should give them a chance…you might just like them.

Chocolate Options

The beauty of these cookies is you can use whatever chocolate chips, or chunks, you have on hand.  For this batch I used semisweet chunks that I had on hand.  You could use milk chocolate chips, semi sweet, white chocolate or a combo of any of the above.  You could also use peanut butter chips for a little peanut butter bite.

The combinations are ENDLESS… have some fun with it.

Sprinkle Fun!

To add even more Easter fun I topped the cookies with a few extra eggs, chocolate chunks, sea salt (because I add them to all mu chocolate chip cookies) and SPRINKLES!  Now I understand that sprinkles may not be everyone’s favorites and you could definately leave them off if you would like but I just love the little extra fun they bring to the cookies.

This time I used mini bunny sprinkles and egg sprinkles but anything you have on hand would work.  This is a super fun way to get the kids involved… they can help sprinkle!!

Cadbury Chocolate Chip Cookies

These quick Cadbury Egg Cookies are the perfect Easter treat made a little something special with some quick browned butter... trust me these will become your go to cookie recipe for each season (just add in more chocolate chips instead of the eggs).

Ingredients

14 tablespoons butter
3/4 cup brown sugar
1/2 cup sugar
2 teaspoons vanilla
1 egg
1 egg yolk
1 3/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cup Cadbury mini eggs, chopped, divided
1 cup semi sweet chocolate chips (or chunks)- you can use any variety you prefer
Course sea salt (optional)
Seaonsal sprinkles (optional)

Directions

Preheat oven to 375
Line 2 cookie sheets with parchment paper, set aside
In a small saucepan melt 10 tablespoons butter over medium heat, cooking until butter just starts to brown, about 4-5 minutes, stirring often
Remove from heart and stir in remaining butter until it is melted
In the bowl of a stand mixer cream together butter, both sugars & vanilla until well combined
Add in egg and egg yolk, mixing until dough is smooth
Let dough rest for 3-4 minutes and then mix for 30 seconds, resting for a minute and then mixing again, repeating the process until mixture is thick and shiny
Add in flour, baking soda and salt until just combined
Stir in 3/4 cup of the chopped cadbury eggs and chocolate chips
Using a cookie scoop place mounds of dough onto prepared cookie sheets, about 2 inches apart
Press additional chopped eggs onto the top of the cookie dough mounds as desired
Bake for 8-10 minutes, or until edges just begin to brown and still puffed up
Let cool for 8-10 minutes on pan until fully set up and then cool completely on cooling rack
Spinkle cookies with sea salt, seasonal sprinkles, additional chopped eggs or chocolate chips as desired as cookies cool

Notes

Use whatever chocolate chips you prefer Leave out the eggs and add in for chocolate chips for a year round cookie treat
