Is your week crazy busy?  I know mine has been.  There seems to be something popping up every couple minutes that has to be handled immediately.  Unfortunately that means dinner doesn’t get prepped… but no worries because this KETO Egg Roll Bowl is the perfect quick fix dinner!  I mean SUPER QUICK!

Ready in under 30

When I say quick I mean this dish is ready to be served in less than 30 minutes.  YES… less than 30 minutes!  Oh yeah, and it is all prepared in one skillet.  You start with the sausage and then add on all the other yummy to make this dish really something special.  All the flavors build upon each other making each bite something to remember.  

It is quick, yummy and easy to clean up.  Really, can it get any better?

So many options

For this ehh roll bowl I used Italian Sausage.  If you want you can use diced up chicken, or ground beef or ground turkey.  Really anything you have on hand will work.

For the coleslaw I went with a bag of broccoli slaw.  You can use a traditional coleslaw mix or a brussels sprouts mix would be delicious as well.  Adjust cooking times as needed to get the veggies to the perfect crisp tender doneness.

PS…it is also so pretty

I do believe you eat first with your eyes and this dish is one of those dishes that just looks delicious.  The pop of color from the broccoli, purple cabbage and carrots really make this dish just so pretty.  

I also love the little bits of sesame seeds sprinkled on top just add a little something extra special.

KETO Egg Roll Bowl

KETO Egg Roll Bowls are a perfect quick dinner. Each bite is loaded with tons of flavor and comes together in under 30 minutes, making this a perfect weeknight dinner.

Ingredients

1 lb Italian Pork Sausage
1 small onion, chopped
2 garlic cloves, minced
1 tablespoon ginger, minced
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
14 oz bag Brocolli Coleslaw Mix
1 teaspoon sesame seeds (optional)

Directions

In a medium skillet cook sausage and onion over medium heat until sausage is cooked through and onions are soft, about 8 minutes
Add in garlic and ginger and cook for another 1-2 minutes
Stir in soy sauce, rice wine vinegar and coleslaw mix and cook for another 3-4 minutes, or until veggies just begin to soften, I prefer them on the crisp tender side, but cook until desired doneness is reached
Serve and top with sesame seeds, if using
