Gooey Butter Cookies

It is the First Day of School here in my part of the world.   To celebrate this big day I made cookies…Gooey Butter Cookies!

SO EASY

I love, love , love these cookies because you only need 6 ingredients and they are ready to gobble up in less than 45 minutes.  Yep…6 ingredients and 45 minutes and you have a treat for the kiddos (young and not so young).  

For this batch I used a Butter Yellow Cake Mix but you can use any cake mix you want.  You could devils food, strawberry, or funfetti…so many options.

Roll them up

These cookies are not overly sweet, which I love in a cookie, but by rolling them in a little powder sugar it adds the perfect amount of sweetness.  The dough will be pretty sticky so if you want it a little less messy you can freeze the dough for about 30 minutes to make it easier to roll.

You can also get the kids involved in this part as they can roll the dough in the powered sugar…it might get messy but it will be fun!

Options…

For some added options…after you roll them in the powdered sugar you could press in some chocolate chips, sprinkles or candy to make them a little more special.

When I use devils food cake mix I add in some mini chocolate chips for extra chocolatey goodness.  Sprinkles are also super fun with the strawberry cake mix…they are just so pretty.  My favorite though is just the plain version…I am a simple girl (well sometimes I am simple).

Ingredients

1/2 cup butter, room temperature
8 oz cream cheese, room temperature
1 egg
2 teaspoons Vanilla Bean Paste , or extract
1 box yellow cake mix (I used Duncan Hines Moist Butter Yellow)
1/2 - 3/4 cup powder sugar

Directions

Preheat oven to 350
Line a baking sheet with parchment paper, set aside
In the bowl of a stand mixer cream together butter and cream cheese until smooth
Add in egg and Vanilla Bean Paste , or extract, scraping down the sides as needed
Add in cake mix, mixing on low, until just combined
Add powder sugar to a bowl
Using a cookie scoop roll dough into a ball and then roll into powder sugar
Place onto prepared pan and gently press down slightly
Bake for 12-13 minutes or until center is just set
Remove and let cool on baking sheet for 5 minutes and then move to a cooling rack to cool completely
ENJOY!

Notes

Store in an airtight container for 3-4 days
