Quick and easy dinners are a must especially when it is back to school time and this Spinach and Cheese Chicken Bake is not only quick and easy but it is DELICIOUS as well!

Quick and Easy

This chicken dish is so quick and easy.  Start to finish you can dinner on the table in under 45 minutes…which is perfect for the busiest of nights.  With only a few ingredients you can create a delicious dinner…chicken, spinach, cream cheese, mozzarella and a few spices.  It really is just that easy.

Layer it up

Once your spinach is wilted and the cream cheese is room temperature (or softened) it is time to ayer it all up.  It is super simple, place the chicken into the prepared dish and season.  Spread the cream cheese on top, place spinach on top and them top with cheese.   Voila…all done.  It really is that simple.

And done

Once the cheese is browned and bubbly and the chicken is cooked through it is all done.  Serve it with your favorite side such as rice or additional veggies and dinner is done. It is just so good!!

  • 2 pounds boneless, skinless chicken breasts (4-5 breasts)
  • 1-2 teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder or Italian seasoning (optional)
  • 2-3 teaspoons olive oil
  • 2 garlic cloves minced
  • 10 oz bag baby spinach
  • 8 oz cream cheese, room temperature
  • 1 teaspoon pepper
  • 8 oz Mozarella cheese


  • Preheat oven to 425
  • Spray a large casserole dish with nonstick spray
  • On a flat surface trim chicken of any excessive fat
  • Season with salt, pepper, garlic powder and chili powder or Italian seasoning (if using) on both sides
  • Place into prepared dish and drizzle with 1-2 teaspoons olive oil
  • In a large skillet heat 1 teaspoon olive oil & garlic over medium heat for 1-2 minutes
  • Add in spinach and cook until wilted
  • Remove from heat
  • In a medium bowl whisk together cream cheese and pepper until smooth
  • Divide cream cheese evenly over each chicken breast
  • Top with spinach
  • Sprinkle cheese over spinach
  • Cover pan with foil and bake for 15 minutes
  • Remove foil and continue cooking for another 15-20 minutes or until cheese is browned and chicken is cooked through
  • Remove and serve
  • ENJOY!!


You can use chicken thighs, adjust cooking time as needed
