One Bowl Chocolate Chip Cookies

I am not sure there is anything much better than warm chocolate chip cookies straight out of the oven.  I mean, there are a few things, but not much.  To make them even better how about making them all in one bowl and not chilling time….yep it is now better for sure.

Scoop-i-dy Scoop Scoop

One of my favorite tricks to make all my cookies the same size, so they all cook the same way is to use a cookie scoop.  I understand not everyone my have a handy cookie scoop laying around but don’t worry.  You can use a melon baller, a small ice cream scoop or a tablespoon and just roll the dough into balls.  

The goal is to just make all the cookie mounds about the same size.

A little extra something 

To make these cookies a little extra special I decided to go with dark chocolate chunks instead of the standard semi-sweet chocolate chips.  Now don’t get me wrong I am a fan of the more traditional semi sweet chip but every once in a while it is nice to change it up a bit.

For me adding in the dark chocolate makes this a perfect cookie.  It adds a bit of a bitter bite which is a nice contrast to the sweetness of this super tender dough.

If dark chocolate is not your thing you could use semi-sweet, milk chocolate or a combo of peanut butter and chocolate chips to really amp them up.

One Bowl Chocolate Chip Cookies

One Bowl Chocolate Chip Cookies that are nice and thick making them a perfect treat for the whole family.

Ingredients

3/4 cup butter, room temperature
3/4 cup brown sugar
1/2 cup sugar
1 egg
2 teaspoons Vanilla Bean Paste or vanilla exract
2 cups flour
2 teaspoons cornstarch
2 teaspoons baking powder
1 teaspoon salt
1 1/2 cups dark chocolate chunks, or semi sweet chips
1/4-1/2 cup extra chocolate chunks to press into baked cookies

Directions

Preheat oven to 350
Line cookie sheets with parchment paper, set aside
In the bowl of a stand mixer cream together butter and sugars until light and fluffy
Add in egg and vanilla bean extract and mix until well combined, scraping down the sides as needed
Add in flour, cornstarch, baking powder and salt, mixing until just combined
Add in chocolate chunks and mix until combined, making sure to not over mix
Using a small cookie scoop place mounds of dough onto prepared pans 2 inches apart
Gently press down on mounds
Bake for 12-14 minutes, or until edges are just browned
Remove and let cool for 5 minutes on pan and then remove to cooling rack to cool completely

Notes

You can replace dark chocolate with any variety of chocolate you prefer.

Perfect for a special treat

My niece and nephew will do anything I ask when I promise them there will be a special treat in their future.  These cookies are the perfect special treat because they are all made in one bowl and come together in no time at all.  

You can have cookies on your plate in less than 45 minutes start to finish.  

Now that sounds like a special treat for sure!
