Balsamic Chicken Tenders

Chicken tenders are one of my most favorite proteins to cook.  They are quick, easy and you can do just about anything with them, making them a perfect weeknight dinner option.

Amping them up a bit

I am a fan of a simple grilled chicken tender, or breast or thigh, but when you can marinade and glaze with something a little special I am an even bigger fan.  The added flavor from the balsamic reduction adds just enough of that something extra to make these chicken tenders something to remember.

They balsamic vinegar brings a bit of tang while the brown sugar gives a bit fo sweet in each bite.  I also love the the little charred bits that form when you grill them, it just intensifies the flavor even more.

Inside or Out 

It is warming up in my part of the world but that also means the rain seems to come too.  So instead of battling rain and wind to grill these little tenders I opted to grill them inside on my trusted grill pan (to purchase click here).  

To cook inside I heated the pan and cooked them over medium-high heat, just as I would outside.  It takes just a few minutes on each sides and then I brushed on a little more glaze and let them cook another minute or so…really brining out the glaze.  It is so, so good.

The PERFECT Addition

This time around I added the chicken tenders to Roasted Veggie Couscous.   This couscous also has a balsamic dressing on it making these chicken tenders the perfect addition.

They would also be great with these Roasted Garlic Mashed Potatoes or this Pesto Risotto.  I also love to cook a few extra for a quick salad the next day.

Whatever you choose to pair them with they will be amazing.

Balsamic Chicken Tenders

Well seasoned chicken that is taken to the next level with a delicious balsamic glaze

Ingredients

1 lb chicken tenders (or chicken breast cut into strips)
2 teaspoons salt
1 teaspoon pepper
1 cup balsamic vinegar
1/3 cup brown sugar
2 garlic cloves, minced
1 tablespoon all purpose seasoning

Directions

Place tenders into a 2-3 qt pan
Season with salt and pepper, set aside
In a small saucepan stir together balsamic vinegar, brown sugar, garlic and seasoning
Bring to a boil over medium heat, stirring a few times
Reduce heat to simmer and cook for an additional 5-7 minutes or until reduced by some and sauce coats the back of a spoon
Remove from heat and let cool for 5 minutes
Pour half of the sauce over chicken and let marinate for 15 minutes in the refrigerator, tossing a few times
Heat a grill pan, or an outside grill, over medium heat
Cook tenders on each side for 3-4 minutes, brushing with reserved glaze, after you flip each time
Remove from heat and serve immediately, or cool and store in the refrigerator to use for another time

Busy Weeknight Dinner…DONE
