A new way to stuff a tater…

One of my favorite meals at almost any of our local BBQ joints is a stuffed baked potato.  I like to stuff the tater with brisket, or chicken or even sausage, just depending on my mood or the place.  This past week My sis-in-love decided to whip up some BBQ Chicken in our new Instant Pots and then I decided to try something super fun.

What I am learning about the Instant Pot is that it really is an all in one magic cooking machine.  You really can put everything you want for dinner in it and it all magically cooks to perfection  I know it sounds crazy but I wouldn’t lie to ya.

For this recipe you put the chicken in the bottom with liquid and then put the rack on top with the potatoes on there.  It all cooks in less than 30 minutes making it a perfect weeknight dinner treat.  

If stuffed potatoes are not your thing the BBQ Chicken is AMAZING all on its own.

You can slow it down as well

If you do not have an Instant Pot thats ok.  You can do the same thing in your slow cooker.  Prepare the same except wrap the potatoes in foil and place on top of the chicken and cook on low for 8 hours.  

Remove potatoes and shred the chicken and ENJOY!

Instant Pot BBQ Chicken Stuffed Potatoes

A fun new way to have BBQ Stuffed Potatoes all made in one pot and in NO TIME!!

Ingredients

2-3 Boneless, skinless chicken breasts
1 teaspoon salt
1 teaspoon pepper
1 teaspoon chili powder
1/2 cup chicken stock
1 cup BBQ Sauce (I used Sweet Baby Rays, but your favorite will work)
4 Medium Sweet Potatoes or Russet Potatoes, baked
Toppings
Sour Cream
Chopped Green Onions
Shredded Cheese
Bacon

Directions

Heat Instant Pot on Sauté setting
Season chicken breasts on both sides with salt, pepper and chili powder
Place into Instant Pot and brown on each side for 3-4 minutes
Switch setting to Manual High and add in chicken stock and BBQ sauce
Place steam rack into instant pot
Place potatoes on the rack
Cover and lock with lid in seal position
Cook for 15 minutes
Quick release, keeping setting on warm
Remove potatoes set aside
Shred chicken and stir into sauce
Let sit for 5 minutes
Split potatoes down the middle
Fill with shredded chicken
Top with any of the toppings you prefer
ENJOY!!

Notes

You can use sweet or russet potatoes, or a combo of both.

A dinner everyone will love

Whether you are cooking for a small family or a big group this recipe is sure to please.  If stuffing potatoes is not everyone’s favorite, offer some buns for some to make BBQ chicken sandwiches.  You could make BBQ Chicken Quesadillas or nachos with the meat.
