Ingredients: 13 tablespoons butter, melted; 1/2 cup sugar; 3/4 cup brown sugar; 2 teaspoons vanilla bean extract (or vanilla extract); 1 egg; 1 egg yolk; 2 cups flour; 1 teaspoon salt; 1/2 teaspoon baking soda; 1 cup semi-sweet chocolate chips; 1 cup white chocolate chips; 1 cup Christmas M&M's

WOW…it is Christmas Eve. I honestly don’t know where this month has gone!! It literally seems like Thanksgiving was just yesterday…and now all of a sudden tomorrow is Christmas and that means it is almost time for SANTA!

Are all the presents wrapped? Is all the food prepped? Are the cookies made for Santa? NO?? No problem…I have a quick, easy and delicious cookie recipe that Santa is sure to love.

Red, Green & White…perfect for Christmas!

These cookies are loaded with everything yummy. There is a bit if semi sweet chocolate, some white chocolate and M&M’s in each bite. I honestly don’t know if it gets any better.

Me personally I love the Christmas M&M’s. There is something so festive about the red and green M&M’s . I love how the colors pop in the cookies and in a candy dish on the counter…just so festive.

Ingredients

13 tablespoons butter, melted

1/2 cup sugar

3/4 cup brown sugar

2 teaspoons vanilla bean extract (or vanilla extract)

1 egg

1 egg yolk

2 cups flour

1 teaspoon salt

1/2 teaspoon baking soda

1 cup semi-sweet chocolate chips

1 cup white chocolate chips

1 cup Christmas M&M's

Directions

Preheat oven to 375

Line 2 cookie sheets with parchment paper, set aside

In the bowl of a stand mixer cream together melted butter, sugar and brown sugar until light and fluffy

Add in vanilla bean extract, egg & yolk, scraping down the sides as needed, until just combined

Add in flour, salt & baking soda mixing until just combined

Stir in chocolate chips and 1/2 cup of the M&M's

Using a small cookie scoop (or a teaspoon) place mounds of dough onto prepared pans

Bake on middle rack for 9-10 minutes or until edges are lightly browned

Remove cookies and immediately press a few more M&M's into the top of each cookie

Let cool on pan for 5 minutes and then remove to cooling rack to cool completely

Notes

You can use any combo of chocolate chips, peanut butter chips or butterscotch chips you prefer.

Making Santa (& the kids) Happy

When it comes down to it, making the guy in the Big Red Suit happy is super important. I mean he is the one with all the gifts….right? Well I can tell you that these cookies are Santa tested and Santa approved…and even kid tested, making them a perfect Christmas cookie.

If white chocolate is not your favorite feel free to use peanut butter chips, or butterscotch chips. You could also use dark chocolate chips with mint chips. Use whatever combo you prefer to make them perfect for you and your family…I mean Santa.
